My first year after college graduation was spent as a naturalist at an outdoor education center. We all took turns in the kitchen, and this French Toast recipe was on the menu each week. I still use this recipe for my family, and any leftover pieces freeze well. Maybe we’ll have to serve this at the farmers’ breakfast next year!
Glen Helen French Toast
8-10 pieces of stale sandwich bread
2 eggs
1 c. milk
1 tsp. pure vanilla
½ tsp. salt
¾ tsp. cinnamon
Whisk together all ingredients except bread.
Preheat and lightly grease griddle.
Quickly dip bread into egg mixture and place on griddle.
Cook until golden on both sides.
Dust with powdered sugar and serve with pure maple syrup.
