 Yes in less than one year, this fabulous event will be upon us.

The Committee reports that new vendors are registering along with those who have been with us for years.  Exciting demonstrations are being planned, and this is shaping up to be another great event

Alessio Vella, Jeremy Heim & Thomas Delli Paoli from Inter-County Bakery Supply were proud to be representing the United States of America for Elenka at the SIGEP Pastry & Gelato show in Rimini, Italy last month.  The long journey was a tremendous success for the trio who learned a lot and want to share it with you.

Blueberry Personal Pies
  


 
 
Blueberry Personal Pies

1/4 cup blueberry jam or preserves
Pie dough cut and fitted into mini pie tins
 2 cups fresh blueberries
slivered or sliced almonds
 
Bake pie crusts in 375 degree oven 15 minutes or until done. Stir preserves with 1 tablespoon water. Simmer or microwave on high until preserves melt, about 30 seconds. Stir in blueberries; return to pot or microwave and cook about 2 minutes or until blueberries are hot but not bursting. Spoon blueberry mixture into pie crusts; chill until set, about 1 hour; sprinkle each pie with 3 or 4 almond slices.

1 1/2 LB. YEAST
18 LB. PATENT FLOUR
4 1/2 LB. PASTRY FLOUR
12 OZ. MILK POWDER
1 QT. EGGS
7 1/2 LB. MR. DANISH
1 OZ. MACE

DEVELOP DOUGH FOR 12 -14 MINUTES MEDIUM SPEED WITH HOOK

STIR IN TILL INCORPORATED:
7 LB. RAISINS
4 1/2 LB. DICED FRUIT

SCALE OFF INTO 6 LB. PRESSES AND PUT ON 7X5 ONTO GREASED SHEET PANS.

PROOF, BAKE OFF, AND ICE BUNS AS USUAL.
