Happy Cinco de Mayo!
Cinco de Mayo – typically celebrated with too many cervezas – is probably one of the most misunderstood holidays. No, it’s not Mexican Independence Day, it’s a celebration of Mexican unity and spirit dating back to 1862 when the Mexican resistance stood up to foreign intervention, defining its national identity.
Well, that being said, it seems only natural to make merry with quality, Latin-inspired food. Check out my Pinterest page to add some authentic flavor to your Cinco de Mayo feast. No nachos here, but feel free to add a frosty cerveza, or perhaps finish with a nice smooth sipping tequila.
Restaurant Consulting
With my love of Latin cuisine, I am beyond excited to have been chosen as the menu consultant for a new restaurant concept startup here in Reno this year called Torta Express. The torta, like the beloved taco, is a staple of Mexican street food.

Bread, adapted from the French baguette into soft, warm-from-the-oven deliciousness, meats cooked in-house and freshly made sauces and salsas are the basis for this authentic Mexican sandwich.

The concept is a casual, Latin-themed sandwich shop with the pilot store planned to open in June in Reno. More local shops will follow, ramping up in Sacramento and Northern California in 2018.

Partners in Pork 
Farm to table may be a buzzword in the restaurant biz, but for me, it’s a way of life. Knowing where the food I cook comes from is vital – it’s the difference between authenticity and artifice. Born from this passion comes my new partnership with Rancho Llano Seco, a family farm in Chico, California and one of the last existing Mexican land grant properties. The Rancho, known for balancing agriculture, livestock husbandry and conservation has been farming and ranching this stretch of Northern California since 1860. I am excited to feature their pork products in my upcoming events and increase awareness of the care they take with nose-to-tail hog practices in the chef community. Read more about it here .
I’m Chef Clint Jolly. My entire life has been in the food world, having grown up in a butcher shop, learning how to properly cut meat at five and serving my own creations to customers at age 13.
