Bain Marie stills: huge double boilers

As a distiller, proper equipment selection shouldn't be the bane of your existence. My bane? Well, her name is Marie, Bain Marie to be exact. This is an often overlooked yet incredibly useful type of still that I am honestly surprised is not used more often, especially with smaller distillers such as myself. Let's start at the beginning, as all aspiring and current distillers do, with our products. My background for making the (crazy) decision to open a distillery rests largely on my love and passion for cooking. 

We are all trying to make an amazing finished product and while ingredients matter hugely, so do the tools we use to transform them. You say you like steak but don't own a cast iron skillet? Shame on you! Only joking, I'll let it slide if you are using the steak for tartare. Make pizza without a pizza stone, a béarnaise sauce without a double boiler? You see where I'm going with this, specifically that last example. A Bain Marie still is just a huge double boiler. Double boilers are used for delicate sauces like béarnaise and hollandaise because there are elements in those mixtures that you really don't want to burn as it can drastically change the taste and consistency, something you can't undo once it's done.  Read more.

 
Trip to a distillery led couple to open their own

Mike and Amy Orlando were on one of the first tours that Le Claire, Iowa-based Mississippi River Distilling Co. ever gave of its facilities. Near the end of the tour, the guide noted the distillery was looking for volunteers to help bottle its spirits, which include a number of whiskeys called Cody Road.

New to town and knowing few people in the area, the couple decided to lend a hand at the upstart distillery. Bottling was fun, and over the next 18 months, the couple became regular volunteers. At the same time, they began to learn what goes into running a craft distillery.

More craft distilleries will open in Indiana.

A team behind Fletcher Place's Hotel Tango Whiskey distillery has purchased a barn, farmhouse and five acres just south of Indianapolis. They plan to grow produce to use in cocktails and turn the house into a rental property. 

Indiana is about to see a boom in craft distilleries like Fletcher Place's Hotel Tango Whiskey and Bloomington's Cardinal Spirits.

A survey conducted by a newly formed Indiana Distillers Guild revealed that eight of its 17 members have plans to open tasting rooms in the next year, said guild president Jeff Wuslich.

Sun King breaks ground on new distillery

Justin Moffett of Carmel-based Old Town Development said he anticipates the new Sun King Brewery tap room and distillery will attract people to Carmel's Midtown area from around the state.
"It's really going to be a draw, not just for the beverages, but the culinary options," Moffett said.

The approximately 15,000-square-foot craft distillery and tap room is projected to open in spring 2018 along the Monon Trail between Main Street and the Carmel City Center.

Sun King co-founder and head brewer Dave Colt said the facility will be capable of producing a maximum of 10,000-proof gallons of spirits and will feature a 250-gallon still to craft high-quality, handcrafted, small-batch spirits.

Uplifting spirits: tales of the trail in Pennsylvania

Luminary Distilling, Cart/Horse Distilling, and Five& 20 Brewing and Spirits share their stories of growth in Erie County.

It's taken years to assess tolerances, but Pennsylvania is finally learning to hold its liquor. This past March, Cart/Horse Distillery (Edinboro) and Luminary Distillery (Summit Township) opened their doors, simultaneously becoming the first two legal distilleries on record in Erie County history. Encouraged by (and very much informed by) the success of the microbrewery boom, the microdistillery movement is quickly gaining steam.
...Thus the Lake Erie Ale Trail, which winds through and beyond Lake Erie Wine Country, has cleared the brush for the Spirit Trail. Like the Spirit Trail's predecessors, the path is being paved through collaboration - local farmers sourcing to local distillers, local distillers working with local brewers, and even would-be competitors selling one another's products (Act 166 of 2016 broadened the capabilities of the limited distillery license, including the ability to cross-market the products of Pennsylvania-licensed breweries, limited distilleries, and limited wineries). All told, the movement seeks to support local agriculture, bolster community, and uplift the region in whatever small way it can.  Read more.
