Bonjour from Mazamet !  

As always, now the summer is here, the months just fly past....so much so it seems only yesterday we were writing the last E-Newsletter!

June has been a very busy month at La Villa serving our first of may pool-side dinners on balmy evenings and guests enjoying the longest day of the year as the 'Fete Du Musique' took place in the centre of town.

Our new online booking system is working well with good feedback from those that have so far used the system to check availability and book with us. Please let us have any comments & feedback from your own experience of using this new system.

With July just around the corner there is much to look forward to in Mazamet including return of the Monday evening March� du Producteurs (from July 7th), the annual Rallye du Montagne Noire (July 24th-26th) and, for the first time since 2008, the "Fanfare Sans Frontieres" (July 9th-11th) - an international marching band competition with teams from 8 countries.

In this edition of our E-Newsletter we have a recipe for recipe for delicious baked peaches; an update on The Little Hideaway, a fantastic special offer for October and some late availability too in July.

Late Availability & Special Offers at La Villa


We appreciate that late availability offers can be limited to those living in Europe, so do scroll down for offers for later in the year and early booking for 2015 too!


July 9th & 10th


If you can grab a cheap flight, why not treat yourself to two nights in a Superior Balcony bedroom for a special price of 250 € (for two, including breakfast)


July 27th - August 7th


Due to a cancellation, we have both Superior bedroom available between these dates - take 10% off nights one & two and then our usual Stay & Save discount from the third night onwards (example, five nights for just 546 € and each subsequent night for 104 € - again for two and including breakfast).


October Offer


Between October 15th & 30th we have a very special offer where you can book one room and get another free - so ideal for introducing your friends to La Villa!


Available in either our Superior or Superior Balcony bedrooms, for a minimum of three nights, on a Dinner, Bed & Breakfast basis and your friends stay for free (and just pay for dinner).


As an example, if you stayed for three nights in a Superior Balcony bedroom you would pay a total of 812 € - that's for four people (two rooms) and dinner on each evening (just 203 € per person!)


Stay & Play - if you like golf, this is a great special offer for you to get into the swing at our local club. Stay two nights, enjoy two dinners and play a round of Golf at Mazamet's La Barouge from just 365 € for two.


Stay & Spa - a great way to re-charge your batteries, relax and return home refreshed!  Spend two nights at La Villa with dinner on both evenings, 2 hours exclusive use of Le Petit Spa and your choice of two 60 minute massages - all from just 465 € for two.


2015 - it's never to early to plan that break!

Baked Peaches with "Cr�me au Mascarpone"


A French guest, from Provence, emailed me this recipe which we served for the first time last week. Wonderful in summer when peaches appear on the markets and delicious flavours combine to make a great end to lazy lunch or dinner party with friends.


When choosing your peaches, ensure the are firm and the larger the better!


Ingredients (for 8)


4 large peaches

40 grams of Amoretti biscuits

2 tablespoons of ground almonds

3 tablespoons of caster sugar

1 tablespoon of cocoa powder

15 cl of sweet white wine

25 grams of butter


For the "Cr�me au Mascarpone"


250 grams of Mascarpone

3 egg yolks

1 tablespoon of sweet white wine

15 cl of cr�me fraich�

2 tablespoons of icing sugar


Pre-heat your oven to 200 degrees.


Using a sharp knife, cut each peach in half, you will need to twist one half to separate from the other. Using the knife, carefully cut out the stone and remove a little more of the flesh from each half to create a well (keep this small amount of peach flesh). Place each peach half on a butter baking dish or a tray lined with foil.


To make the filling, put all of the dry ingredients in a food processor plus the little peach flesh you reserved. When it has become a fine powder, slowly add a little of the sweet white wine until you have firm paste (you will only need around 1/3 of the wine). 


Spoon the mixture into each well of the peach and top with a little dab of butter, pour the remaining wine on the tray and place in the oven to cook for around 30 mins.


To make the cr�me au Mascarpone, in the large bowl cream the Mascarpone, egg yolks and icing sugar together until smooth, add the sweet white wine and cr�me fraich� and then whisk until it starts to stiffen - place the bowl in the fridge until needed.


To serve, remove the peaches from the oven and allow to cool for 10 mins. Place one peach half onto your serving dish, spoon over a generous amount of the Mascarpone mix and dust with cocoa powder.

We have just have installed an easy to use online booking system on our website.


You simply enter the date on which you would like to arrive, then the number of nights, and you can view which rooms are available and their respective prices (which will include our Stay & Save 20% discount from night three onwards).


Of course, you can still email or call us directly to make your reservation, but this new system will allow you to see if we are already full during the dates you may be planning to stay and you can book the room in just a few clicks.




The Little Hideaway -Taking Shape   


After six months, The Little Hideaway, our new luxury self-catering lodge for two is taking shape nicely.


With most of the external works to the property now complete we will re-commence work in October with the fitting of the new luxury bathroom, kitchen & bedroom ready to welcome our first guests for the Easter weekend in early April.
