Bonjour from Mazamet !  

The first month of our 2015 has almost come to and end and already we have welcomed guests from Australia, France, Switzerland, England and the USA through the gates of La Villa. 

As we write this edition, our local park "Les Jardins des Promenades" has the annual Florialis and we will be popping across later today to buy all our herbs and order our summer bedding plants from the local producers. For us, this event signals the start of a series of events & activities in and around Mazamet and a sign that summer is just around the corner.

Yesterday, we put the final touches to The Little Hideaway and you see some photos of the interiors on the Hideaway's own Facebook page ! Don't forget - we have a fantastic opening offer of a 25% discount on any 7 or 14 night stay throughout 2015.

Keeping (well trying!) up with social media, you can now find us on Instagram @villademazamet - please follow us and add #Lavillademazamet to any photos you upload & share from your stay with us.  We will be having a photo competition towards the end of our season!

We mentioned last month about our feature in the  Australian publication "French Provincial"  - there was a delay on the printed edition hitting the shelves but this is the cover shot and it should be available across Australia this week.

Lemon Posset

 
This is a classic old British pudding that is always a favourite with our guests as it is light & zesty and an ideal end to a dinner party at home too.

 
Ingredients (6 servings)
 
1 pint (600ml) of single cream
150 gms of caster sugar
Juice & zest of two lemons
10 Amoretti biscuits
 
Heat the cream & sugar together in a pan and when it reaches boiling point (you need to watch it as it can boil over very quickly!) let it bubble away for three mins. Remove from the heat, cover and stand aside to cool at room temperature.
 
As the cream is cooling, zest and juice the lemons into a small bowl, cover and set aside (you will remove the zest later but it will infuse and the juice will become even more zesty).
 
Spoon/pour into your chosen serving dish, place on tray and cover with film and pop in the fridge for at least four hours to set.
 
Traditionally the Lemon Posset is served as is or with a shortbread biscuit on the side as we do. However, a nice touch is to blitz Amoretti biscuits in a food processer until you have a fine crumb and, just before serving, add one tablespoon to the top of each
 
Tip - keep any left over biscuit crumbs in an air-tight container an use them for toppings on ice-cream or in a crumble mix.
