2014 is here and our 6th season at La Villa - where does the time go?    

We have just returned from a wonderful break in Australia where we caught up with 20 of our previous guests & friends who welcomed us to their homes & local areas and showed us some wonderful Aussie hospitality.

... and what could be a better welcome home to receive news from Trip Advisor that, for the fourth consecutive year, we have won the Travellers' Choice Award!

The weather, like much of Europe, has been very mild & wet so far this winter here in SW France, but we know that a cold period normally comes our way in February, so spring still seems a little while off yet.

As usual we hit the floor running after our winter break with lots going on at La Villa to prepare for guests in 2014. The renovations of our Classic room's ensuite are well underway (we are doubling the size installing a huge walk-in shower and new under-tile heating too) and we are currently putting orders together for our wonderful new room amenities including Tassimo hot beverage machines which will allow guests to make tea, coffee, hot chocolate & herbal tea at the push of a button in the comfort of your own room!

Our new exclusive range of Gilchrist & Soames toiletries will arrive ready for re-opening on April 1st and look out in next month's E-Newsletter for a competition to win one of three luxury travel kits!

The Little Hideaway - who's the winner?

 

Thank you to all those who took the time to enter our competition to win a stay at The Little Hideaway - we had he highest number of entries ever to one of our competitions.

 

The lucky winners are John & Joanne Miles from Melbourne, Australia, who we look forward to seeing again this summer.

 

Work will start on the renovations of The Little Hideaway next week - so if you are looking to shut yourself away in the tranquillity of a mountain village look no further !

Limoncello Parfait

 

A number of guests have requested this recipe via our Facebook page & email so enjoy! It is a little time consuming to start with but bare with it, as the results for a dinner party with friends are well worth the effort.  

 

Ingredients (serves -up to 12)  

 

1 eggs plus five egg yolks 

100 grams of caster sugar

Zest & juice of two lemons

1/2 sheet of leaf gelatine

60ml of Limoncello (Italian digestive)

300 ml of double cream, lightly whipped

 

For the Coulis

 

250 grams of fresh or frozen raspberries

50 grams of caster sugar

2 Tablespoons of cold water

 

For Presentation

 

3 Fresh raspberries (per parfait)

Sprigs of fresh mint

 

You need to make the parfaits in the morning as they take at least four hours in the freezer to set, so they are also ideal to make a day ahead too (as is the coulis). We use chefs rings which we place on a baking tray lined with baking paper (you can also use other ramekins or aluminium moulds).

 

For the parfaits - place the eggs, lemon zest & juice and sugar in a glass bowl placed over a pan of simmering water. You need to whisk vigorously for around 8-10 mins until the mixture has become thick & creamy with no liquidity left at the bottom. Remove from the heat and place in the bowl of an electric mixer for 5-6 mins until cool. 

 

Whilst the mixture is whisking, place 1/3 of the Limoncello in a pan and heat gently; soak the gelatine in cold water for a few minutes then squeeze excess water and add it to the warmed Limoncello; remove from the heat to allow to cool and then add the remaining Limoncello.

 

Whisk the cream to soft peaks stage and you are then ready to combine by lightly whisking the Limoncello into the egg mixture and then folding in the whipped cream - then carefully spoon the mixture into the chefs rings or moulds (they are quite rich so only fill the rings by two thirds, depending size). Place in the freezer for at least 4 hours.

 

For the coulis, add the frozen raspberries, sugar and water to a pan and gently heat until "mushy" - pour into a food processor/liquidiser on a high speed for 10-15 seconds and then sieve to remove the seeds. Store in an air-tight bowl/container in the fridge.

 

To serve, remove the parfaits from the freezer 5 mins ahead of serving and scoop out a small well in the centre before removing the chef rings (if using a mould you will need to turn out first) - is you sprinkle a little icing sugar on your serving bowl it should prevent the parfait from sliding around). Place the parfait carefully in the serving bowl, spoon some coulis in the well (it does not matter if it runs downs the edges of the parfait) add three fresh raspberries and a spring of mint - et voila !
