Bonjour from Mazamet !

It's hard to believe that May is almost upon us and spring is now well and truly underway here in SW France - and with mostly fine weather, peaking at 27 degrees in April, we know it will not be too long before our first al-fresco dinner service of the year.

April has been a busy month for us at La Villa - the winter pool cover came off, our vegetable & soft fruit garden is fully planted (and growing day by day!) and we have finished our new gazebo (further details below).

All of our summer bedding plants arrive this coming Friday and this always signifies for us the start of our busiest time of year when we welcome guests, new & old, from throughout the world.

In this edition of our e-newsletter we have a tasty recipe for a Celeriac & Apple Soup, some great last-minute getaway offers for May; details of our new Hot Stone Massages and a suggested route from Toulouse airport to Mazamet for those arriving into this airport to start their trip in SW France.

A Place in the Shade

 

We have now finished our new gazebo that provides a lovely shaded seating area adjacent to the pool.

 

Bring your favourite book, order a bottle of chilled wine and relax!

 

We are sure our gazebo will become a popular feature this summer and an ideal spot for an aperitif as the sun begins to set over the Montagne Noire.

 

 

Celeriac & Apple Soup
Celeriac & Apple Soup

 

 

Celeriac can be quite an acquired taste but combining it will apple gives it a whole new flavour. 

 

Ingredients (for six servings) 

 

500h grams of peeled & cubed celeriac 

2 teaspoons of dried thyme

Salt & Pepper to taste

2 apples (I find granny smiths work well, peeled, de-seeded and cubed)

1 medium onion, roughly chopped

50 grams of butter

750 ml of vegetable stock (from a stock cube is fine)

50 grams of lardons (or coarsely chopped bacon)

Enough walnuts for three-halves per serving

Olive oil 

 

Sweat the onions in melted butter for 5 mins, add the cubed celeriac and thyme & seasoning and sweat for a further 10 mins; add the stock and bring to a boil, turn down the heat & simmer for 15 mins; finally add the apple and simmer for a further five minutes. 

 

Whilst hot, blitz in a blender or food processor - the consistency is very thick and creamy so you should not need to add any cream to it. 

 

To serve, heat a little butter in a non-stick pan and cooked the lardons/bacon, add the walnuts for a few minutes to eat through. Ladle the soup into warmed bowls, add a few walnuts & lardons/bacon to decorate and drizzle with olive oil.

 

      
NEW- Hot Stone Massage

 

Sheda, our masseuse, has just returned from a week's training course on Hot Stone Massage which she will be adding to her treatments here at La Villa from the middle of May.

 

This treatment uses smooth stones that are gently heated in water and used to massage with oils....excellent for soothing sore muscles and tightness.

 

As a special offer, in May & June we are offering a 15% discount off any 60 min or 90 min massage so why not treat yourself to a relaxing treatment as part of your break at La Villa?

 

 

  
Toulouse (Blagnac Airport) to La Villa de Mazamet  
  

With an increasing number of our guests arriving in Toulouse (due to number of international connections) we have written a route that takes you to places you would not normally discover if coming to us direct. We would advise using this route if you arrive in Toulouse up until around 2pm (this route is also great in reverse if you have a late afternoon/evening flight when you leave La Villa). 

 

When you leave Toulouse' "Blagnac" airport, follow signs that will take you onto the A68 in the direction of Albi. You will only stay on this motorway for a short distance and exiting onto the D888 which will be signed for Rabastens, stop here for a wander around.

 

Continue on the D888 in the direction of Lisle-Sur-Tarn and again stop in this village (a good spot for lunch too); leaving Lisle-Sur-Tarn, take the D888 in the direction of Gaillac and again stop and wander through the streets down towards the river to see the church and ancient bridge.

 

From Gaillac, head on the D964 towards Graulhet (just drive through this town) and pick up the D83 signposted for Lautrec & Castres. Stop at Lautrec which is a lovely medieval village, walk up to the old windmill (if there weather is good) for a stunning view towards the Montagne Noire and beyond to the Pyrenees. Have a coffee in Caf� Plum.

 

From Lautrec, take the D83 in the direction of Castres and after 10/15 mins you will reach a roundabout over a major road and you want to take the slip road onto this (N112) in the direction of Mazamet. Stay on this road until you reach a roundabout with some sports fields on your right, take the second exit signposted Mazamet (this is still the N112 but sometimes the D621 also).

 

Continue on this road (about 10 mins) until you reach a set of traffic lights with an "Aldi" supermarket on your left, this is the "K Junction" described on our website's downloadable directions which you can print from this link (then follow the directions for the last few minutes to La Villa http://villademazamet.com/en/pdfs/directions.pdf

 

  

As a foot note; whilst sat navs are always a great asset, you still can't go wrong with a good old map. If you are only staying in our region, you may find these two light-weight maps a good addition for your travels.
