Bonjour from Mazamet !  

Where did August go?  Another busy month of guests from around the globe have passed through La Villa's gates and it's fantastic to be receiving quite a number of reservations for 2015 already.

We have just taken a quick drive up to see progress at The Little Hideaway, we can tell the seasons are starting to change as the chestnuts are well formed & the colour of the leaves are changing (and this past week we started to see a greater array of squashes & potiron on the markets). 

As we move into September, our menus will start to reflect the seasonal produce and guests can enjoy the local chestnut festivals, perhaps going hunting for Cepes on the Montagne Noire or visit a vineyard to see the start of the 2014 harvest.

Today we achieved our 450th Trip Advisor review which is a fantastic result as you, our guests, have been so generous with your time & feedback and very much hope this will help us achieve a further Traveller's Choice Award in 2015 - so if you have not had the time year, please do add digit to keyboard as it makes the world of difference to us.

March� de Producteurs


On August 25th, Mark and I managed to visit the final Monday evening producers' market in the centre of Mazamet, this annual event grows in popularity each year and takes place each Monday evening in July & August in the carpark outside of the Office of Tourism. 


With a choice of 15+ food & drink stalls (selling everything from local pasta, fois gras, confit du canard, ice-cream, etc.) the event is great for soaking up a slice of local life here in SW France.


Sitting amongst the locals last evening, from young children to their grand parents, it reminded us of one of the pleasures of living in France and the 'conviviality" that good food, wine & friendship brings together (not forgetting the beautiful summer sunshine too!).


So make a date for your diary, the 2015 March�s will commence on July 6th.

"Twice Baked Comt� Souffl�"


If you feel that souffl�s are just too difficult and stressful for a dinner party, think again. This recipe for twice-baked souffl� has been a great hit this summer here at La Villa and you could be impressing your friends & family too with your culinary skills!


You will need to use individual souffl� dishes which are not expensive and available from all good cook-shops and online. Even though you may not be serving 10-12 guests, make this full batch and then select the best shaped ones to serve (keep the others for yourselves as they re-heat for a third time perfectly!)


Ingredients (for 10-12)


200 grams of aged Comt�, grated (or a good quality mature cheddar)

80 grams of plain flour

80 grams of butter (plus extra for greasing)

600 ml of full-fat milk

One large onion

One Bay leaf

Pinch of ground nutmeg

Bunch of fresh chives (finely chopped)

2 Teaspoons of Dijon mustard (or one of English mustard)

6 Eggs (separated)

500 ml single cream

150 Grams of grated Gruyere


You need to be quite organised in making these so make sure you have all of your ingredients weighed and ready to hand plus two saucepans, large heatproof bowl plus a another very clean bowl for whisking the egg whites; a heatproof 1lt measuring jug, sieve and an electric hand whisk. Heat the oven to 200 degrees; butter (using soft butter and a pastry brush) your ramekins, and place a circle of baking paper in the bottom of each.


Firstly, place the onion, milk, nutmeg and bay leaf in a saucepan, add freshly ground salt & pepper. Slowly bring to the boil and then sit to infuse for 10 mins; strain and reserve 500ml.


In a separate clean saucepan, melt the butter and then add the flour, combine together and stir continuously for a minute. Slowly add the milk, it may appear a little lumpy but keep stirring and you will be left with a very smooth, thick, paste.


Remove the saucepan from the heat, stir in the mustard and grated cheese until fully melted & combined. Adjust the seasoning to taste and then spoon the mixture into a heatproof (large) bowl and let rest for five mins.


Whilst the mixture is resting, whilst the egg whites until the stiff peak stage. Next, stir two tablespoons of chopped chives into the warm mixture and then one egg yolk at a time until fully combined. With a large metal spoon, stir 1/4 of the egg whites into the mixture to loosen it before carefully folding in the remainder.


Spoon the mixture into your ramekins, but not filling to the top (leave around a 1cm gap), place on a baking tray and bake for 15-18 mins and DON'T open the oven door until finished (keep an eye on them, depending on how your oven operates you may just need 15 mins).


Remove from the oven and you will start to see the souffl�s sink which is fine.  When cold, run a sharp knife around the edge and remove, place on a lined baking sheet, cover with Clingfilm and place in the fridge for up to 24 hours.


To re-heat, pre-heat your oven to 200; remove the Clingfilm, drizzle a little cream over the top of each and a good pinch of the grated Gruyere. Place in the oven for 12-15 mins.


Whilst the souffl�s are being second-baked, add the 500 ml of cream to a saucepan, season generously and bring to the boil and then simmer for 5 mins, stir in the remainder of the Gruyere until melted (you may need to add a little corn flour/water mix to thicken).


To serve, spoon a little of the Gruyere cream into a serving bowl, place a souffl� carefully in the centre and add a sprinkle of chopped chives - how can your friends failed to be impressed when you serve this dish at your next dinner party?
