Welcome to our November

Bonjour from Mazamet !

Well, the Christmas tree is up, the fireplaces are decorated, and we have had snow.... what a difference a month makes.    

After the warm weather we had last month and the first week of November, the last few weeks have reminded us that winter is knocking on our door! This past weekend more than 10 cm of snow fell on the Montagne Noire and a drive to Carcassonne airport was made even more enjoyable with the white landscape it created.

With only two weeks until our annual break we have a busy time with visiting family and also, on December 4th, our annual festive lunch for some of Mazamet's older generation that will be on their own at Christmas. It's a very special day for us as it's heartening to give a little something back to the community.

Before we make it public on our website, we wanted to share with you the news that we will be closing La Villa from November 1st until April 1st each year (the exception being the Valentines' weekend in 2014 and, in future years if Easter falls in March we will open from Easter).

We have made this decision to enable us to have a longer period to re-change our batteries after the busy summer season here at La Villa and also for us to complete our maintenance & renovations plus other projects during the winter months.

In this edition of our E-Newsletter we have a recipe for one of our own favourites "Veal Milanese"; our latest special offers; a reminder about the Les Amis loyalty scheme (with just a few days until we close this year's applications); an update on The Little Hideaway plus news about what we will be up to this winter.

The Little Hideaway - our new venture for 2014


Since our last email we are pleased to report and we have signed the paperwork for The Little Hideaway and will take the keys to commence our renovations in January.

The Little Hideaway sits in 800 square metres of private land with views back towards the stunning Montagne Noire, and the facilities will include:

  • Kitchen/Diner (equipped with cooker, hob, dishwasher, washer/dryer, Nespresso coffee machine, etc. -  leading to a raised deck area with mountain views
  • Bedroom/lounge area with the same luxury king-size beds we have at La Villa; 37 inch flatscreen TV/DVD/Ipod Dock 
  • Spacious bathroom with walk-in shower, twin sinks, separate bath and under-floor heating
  • Landscaped gardens with sun terrace, decking area & BBQ (as well as private parking through an electric gate)

Unlike most self-catering "gites"in France, where you have to stay Saturday to Saturday - we will be offering guests the opportunity to stay at The Little Hideaway for a three night weekend break (Friday-Sunday); four night mid-week break (Monday-Friday) or the full seven days - with prices starting from 575 €.

The Little Hideaway is ideal for those looking for peace and quiet and total privacy with cycling, walking, mountain lakes & villages all on the doorstep.

What's Going On This Winter At La Villa?


As many of you know, we always like to keep busy and improving La Villa for our guests. The quieter winter months allow us the time to undertake maintenance and renovations and this coming winter will be no exception (in addition to the renovations on The Little Hideaway)


Classic Room Ensuite -  we will be doubling the size of this room, adding under-tile heating, a towel radiator plus a new larger walk-in shower.


Bathroom Amenities - whilst guests love the L'Occitane bathroom amenities, as a company they have been very unreliable with orders arriving late and incorrect. We have, therefore, decided to change the range in 2014 and, after sampling more than 10 products, have chosen a lovely range from "Gilchrist & Soames" called "Spa Therapy" which we know our guests will enjoy (we will have a competition in a spring edition of our E-Newsletter to win a gift set of these new products!)


Tea & Coffee Facilities - from Easter 2014, we will be adding Tassimo hot beverage makers to all our bedrooms. These simple to use machines will provide guests with a number of delicious beverages (tea, herbal tea, coffee & hot chocolate).

Veal Milanese


This is not something we commonly serve to our guests (as many local restaurants serve it) but it's a dish we cook for ourselves in the winter months as it's so delicious and also quick to prepare.


Ingredients (serves 4)  


4 slices of rose veal (ask your butcher to slice it about 1cm thick)

A packet of medium/fine breadcrumbs

2 Eggs

4 tablespoons of plain flour (seasoned with salt & pepper)

Large knob of butter

1 Lemon, quartered

Fresh Parsley (finely chopped)

Tagliatelle & cherry toms (or your chosen accompaniment)


Using three separate large dinner plates; place the seasoned flour on one; breadcrumbs on another and the beaten eggs on the other. Pat-dry your slices of veal using kitchen paper and then place (one at a time) on plate of flour and coat each side; next dip in the eggs (again both sides) and finally the breadcrumbs, ensuring it is well coated. Then place on a clean plate until ready to cook.


To cook, use a large non-stick frying pan and heat the butter until completely melted and sizzling. Add the slices of veal, cooking for around 4 mins each side until breadcrumbs are crisp & golden (I normally cooked two at a time and then place on a plate in a warm oven whilst cooking the second batch).


We serve with a slice of lemon & parsley and simple buttered tagliatelle that we stir through with parsley & black pepper  (it is also very nice with freshly cooked home-made chips!). The cherry toms give a nice bit of colour and added taste too but you can serve with a green salad or what ever you fancy on the side.

As you may know, we have been fortunate enough to receive the Traveller's Choice Award from Trip Advisor in three consecutive years (2011/12 & 13) - and it is the month of December that will decide if we will receive the award again in 2014.


The award is given to the top properties in each country, based upon both the number of reviews and also the number of "Excellent" reviews received.
