Bonjour from Mazamet !  

The first month of our 2014 season is drawing to a close already; the pool is up to 20 degrees and next week all of the summer bedding plants will arrive.

Our ensuite bathrooms and Le Petit Spa are now enjoying the addition of our new luxury "Spa Therapy" amenities range from Gilchrist & Soames... and you can win one of two gift packs in next month's E-Newsletter.  

This past weekend Mazamet saw its first major event of 2014, the "Floriales" with a large outdoor plant fayre and international floristry competition - three of the entrants stayed at La Villa and were pleased that one took home the bronze medal.

With the local elections brought a new Mayor for the Town who has announced the return of the Sans Frontieres - a marching band competition that sees competing teams from Europe & the USA march through the streets of Mazamet before the competition take places at the rugby stadium - the event is scheduled to take place mid-July (once the exact dates are announced we will post these on our Facebook page

In this edition of our E-Newsletter we have a recipe for asparagus & gruyere tartlet; some late availability offers for May & June; an update on The Little Hideaway and some tasty tips on dining out in the area.

Little Hideaway - Update
Due to the amount of work involved (including having to re-construct much of the roof) we have decided to delay the opening of The Little Hideaway until Easter 2015.
Another cause for the delay was seeking permission to remove some trees on a neighbours plot of land which has now (as the above photo shows) opened up the stunning view towards the Montagne Noire.

Asparagus & Gruyere Tartlet


This is quick recipe as a starter for a dinner party or as a main course for lunch (and one that can be fully prepared in advance too).


We are coming to the end of our asparagus season here in SW France and this is a great way to enjoy these tasty tips before they disappear again until next spring. 


Ingredients (for 4)


20 asparagus, trimmed to 8 cm lengths

100 grams of grated Gruyere cheese

Dijon mustard (around a tablespoon)

Puff pastry (pre-made is fine) cut into 12cm squares

A few fresh thyme leafs

One egg, sea salt & pepper


With a sharp knife, score the pastry squares 1cm from the edge all the way around (be careful not to cut right through the pastry!) Brush the internal square with Dijon mustard, and divide the grated cheese on top and spring a few thyme leafs on top.


Top and tail the asparagus tips, five to each tartlet, season well and place on a baking sheet. You can warp in clingfilm and keep in the fridge until needed.


Heat your oven to 200 degrees, brush the outer square of each tartlet with a beaten egg and bake for around 15/20 mins until the pasty edge is golden.


You can serve on a bed of rocket & cherry tomatoes or with a larger side salad as a main course at lunch time.

Dining Out - certainly spoilt for choice !


Did you know that within an hour of Mazamet there are no less than seven restaurants that have been awarded a coveted Michelin Star? (in fact, Le Parc, in Carcassonne, received it's second star in 2013).


We have (as part of our local research and love of food!) eaten at three of these restaurants and our aim is the dine at the others before too long - a tough job, as they say, but someone has to do it! 


Our most local of these restaurants, and the favourite of ours to date, is Les Bistrot Saveurs in nearby Castres where you can enjoy a lunch for around 30 € - why not take the train from Mazamet, walk along the river & enjoy a lazy lunch (or on a Wednesday night, when we don't serve dinner, we are happy to arrange a return taxi)


The other Michelin Star restaurants are located in Albi, Las Tours, Carcassonne and Aragon and we are happy to help with reservations.


Of course, there are other fantastic restaurants in the region that have (perhaps by choice) not attained the Michelin accoldade and two of our favourites are Domaine Gayda and Les Secret Gourmands.


Domaine Gayda is located 20 mins south of Carcassonne (towards Limoux) and the restaurant sits overlooking their vineyard - lunch includes two glasses of their own wines and, as a guest of La Villa, we can arrange a pre or post-lunch wine tasting too. 


On route to Albi, you pass through the village of Realmont and tucked away is Les Secrets Gourmand - a family run business that uses the best of local ingredients from the Tarn.  Build in a visit to Les Secrets Gourmand as part of our Albi, Lautrec & Cordes-sur-Ciel day tour.
