Chocolate Pecan Bread Pudding

 

1 1/2 lbs Stale Bread (1/2" Cubed)

6 Eggs

1 Quart Heavy Cream

1/2 Cup Granulated Sugar

1/4 Cup Brown Sugar

1/4 Cup Maple Syrup

1 tsp Cinnamon

1/2 tsp Nutmeg

1/2 tsp Ground Ginger

1/2 tsp Ground Allspice

1/4 lb Chopped Pecans

1/2 lb Chocolate Chips

   

Place cubed bread in a large stainless steel mixing bowl. In a separate mixing bowl, whisk the eggs then add in the cream. Whisk in the sugar, spices and maple syrup. Add this mixture as well as the pecans and chocolate chips to the bread and incorporate. Lay mixture evenly into a well sprayed full size pan. Cover with parchment paper and then foil. Bake in a 325 degree oven covered for 20 minutes. Remove cover and continue baking for an additional 20-25 minutes.

LCC Gives Back
Through a long standing partnership with the Lynnwood Food Bank, extra food that is left over from an event is donated.
After the food is picked up from the Lynnwood Convention Center, it is repackaged by volunteers into meal sized containers and given out to local families each week. The Lynnwood Food Bank has been providing to the less fortunate in Lynnwood for over 30 years and through the help of volunteers it has never been closed or missed a day of distribution. Depending on the season, the Lynnwood Food Bank serves an average of 1,062 households each month.
The Lynnwood Convention Center has donated over 6,000 pounds of food to the food bank so far this year.

Employee of the Quarter: Hung Tran
 
Hung Tran has been an exceptional member of the Lynnwood Convention Center team since the building opened in 2005. As a Go-To-Crew Lead Hung Tran, or just "Tran" as he is known around the venue, works tirelessly setting rooms, cleaning the facility and training other team members on the best practices that he has developed over decades of working in the industry.  Tran is the undisputed master of room sets and consistently shocks new team members with his speed and accuracy. "I have honestly never witnessed anyone who can set up a room as quickly as Tran" said Will Christison the Convention Center's Director of Operations and Event Services. "He helps to make everyone he works with better and we are very lucky to have him on our team". 

For Tran's continuing excellence we are delighted to have him as our Employee of the Quarter. Congratulations Tran on earning this award and thank you for all of your hard work!

 

Planning Tips: 
Hosting a Thanksgiving Gathering

Hosting a holiday get-together can be stressful and expensive but you should enjoy it too!  Here are a few tips from our event planning team for making this year's Thanksgiving great.

Decor
An autumn theme with browns, reds and oranges will create a warm, cozy atmosphere and mini pumpkins make inexpensive, natural centerpieces. If there are children at your dinner, Thanksgiving crafts and drawings of what they are thankful for add a family feel and make for great conversation pieces.

Setup
If there are more guests than fit at your dining table, set up an extra table so everyone has enough room.  Designate a place after dinner for guests to watch football and where others can socialize. If children are attending, make room for them to do activities.

Food
A potluck style meal will create less preparation for the host and add more variety to the meal. Find out from each guest what they will be bringing to ensure all the essentials are covered and there are no duplicates. 

Timeline
Make sure the guests know what time to arrive and when the meal will be served. If there are guests that watch the football game, plan to have dinner at a different time.
