Message from the General Manager 

What an exciting time of year!  This October has proven to be the busiest month in the Convention Center's history.  It's great to welcome back events and to meet new clients as the Convention Center bustles with a variety of activities this fall. 
 
Our new 2016 menus have been released - expanding our pallet with a variety of flavors and cuisines, while providing our clients with great value.  The Lynnwood Convention Center menu continues to focus on house-made from scratch recipes using local ingredients. 
 
As we wrap up a successful 2015, we look forward to 2016 and the events it will bring.  On behalf of the entire Lynnwood Convention Center team, we wish you a fabulous holiday season and joyous new year!

Butternut Squash Bisque
 
 
Butternut Squash, 8 whole
Butter, 1.5 cups
Olive Oil, 1/4 cup
Diced Onion, 8 cups
Diced Celery, 4 cups
Diced Carrots, 4 cups
Minced Ginger, 1/4 cup
Minced Garlic, 1/3 cup
Coriander, 1 Tbsp
Ground Allspice, 1 Tbsp
Ground ginger, 1 Tbsp
Tarragon, 1 Tbsp
Thyme, 2 Tbsp
Cinnamon, 1 Tbsp
Cayenne, 1 tsp
Nutmeg, 1 tsp
Cardamom, 1 tsp
Flour, 1.5 cups
Lobster Stock, 1.75 gallons
Cream, 32 oz
Maple Syrup, 1/4 cup
Madeira Wine, 1/2 bottle

Preheat oven to 350°. Cut each butternut squash in half (the long way). Set squash flesh side down on a sheet pan and bake for 1.5 hours. Once cooked, peel squash and puree.
Melt butter in a fry pan. When melted, add olive oil, onion, carrots and celery and cook until softened. Add spices and continue sauteing until vegetables are fully cooked. Add flour to the pan and cook for 6-8 minutes until brown.
Whisk in lobster stock and allow soup to thicken. Add pureed squash, cream, maple syrup and wine. Simmer soup for 20-25 minutes.

Pretopher Georgescu
Kitchen Team

Pretopher has been an integral member of the culinary team since 2013. Pretopher learned her cooking skills from her grandmother and mother growing up in Trinidad. She has contributed to the success of the Lynnwood Convention Center by consistently providing our guests with flavorful and eye appealing food. If you have tried our mushroom farro risotto, the chances are high that it was prepared by her. Pretopher has also made some concept and recipe  contributions to the upcoming 2016 menu.

Sara joined the Lynnwood Convention Center team in April 2015 and started at a running pace. Sara has been eager to learn and to take on more responsibility during her first 6 months here. The Operations Team has gone through some big changes this year and Sara has stepped up to ensure events are taken care of and staff needs are addressed.

Event Planning Tips:
Three Questions for Your 
Holiday Party Planning

With holiday decorations going up in neighborhoods and holiday music playing at retails stores, now is the time to plan your holiday party. Whether you are organizing a holiday event for the office or one for friends and family here are some questions that you should ask yourself before you start the planning process.  The answers to these questions will help guide you to a successful holiday event.
 
Do you have a theme for your holiday party?
Nailing down a theme will help you convey to your guests the overall feel of your event and can guide your food, drinks, music and decoration selections. Consider a snow theme where guests are asked to wear white. Follow the white theme into your food, hot crab dip or seared scallops over a parsnip cream and then for dessert a coconut layered cake or a white chocolate cheese cake.
 
Does your party have to be in December?
December is the month when people are busy with shopping, family events, and other holiday parties. For a better turnout, January may be a good solution. 
 
What type of drinks are you offering?
People spend a lot time working through their menu and overlook the drinks. Think about having a special holiday drink, like a Poinsettia Mimosas or Hard Rocker Cider, that can be made with alcohol for the adults and without for the designated drivers and children. Just remember, when alcohol is involved Uber can be helpful in getting guests home for the night. Set up the app on your phone before the party starts and send for a car if needed.

1. Each season, Chef Michael creates a new fresh menu featuring seasonal ingretients.

2. We use 100% compostable items at our coffee stations.

3. The building features two permenant art installations: an oudoor sculpture and a lighted dance floor on the lower concourse.

5. Over the past 6 years, 145 groups have chosen to host their regional convention in Lynnwood.

7. Guest service is very important to us. Last year we acheived a guest service 
rating of 96%.

8. This year, we partnered with the Schack Art Center to currate our building art exhibits. The artwork is changed twice a year.

9.Due to our recycling program and green efforts, our trash compactor is only emptied twice a year.

10. In 2014, convention center events generated an estimated 15,000 hotel room nights.
