Message from the General Manager
Yes, it's happening. Summer is coming to an end. Before you settle back into your routine of school days, football, and the dreaded chore of leaf raking; I'd like to take a moment to tell you about the past few months at the Lynnwood Convention Center.
In short, we were busy! We welcomed many exciting events, conducted our annual planning exercises, and we even managed to make some building improvements along the way!
The Food and Beverage Team has been working on menu revisions and additions for the upcoming year. The Team has spent the last three months exploring the newest in catering trends, service techniques and presentation styles. I'm excited to share with you some of the new features and services that will be offered here at the Center in the next coming months.
Budgets, sales goals, and marketing plans...oh my! This summer our Finance Team worked closely with the Sales Team to set our pace and goals for next year. Much like setting a household budget, we conduct similar exercises to analyze our revenue and expenses. The results of these exercises assist us in shaping the financial direction for the coming year.
The Operations Team managed to find time amidst our busy summer event schedule to have new carpet installed on the concourse spaces and in some of our lower level meeting space. It looks fantastic and we're excited to show it off this fall. Pssst...if you'd like to see it please stop by on September 26th from 6:00 P.M. - 8:00 P.M. for our Artist Reception, it's open to the public!
This weekend as summer comes to an "unofficial" close; we'll pause, catch our collective breath and get ready...for another busy season right around the corner! I think this Team is ready for it, just please don't ask us to rake the leaves...

Recipe by Chef Michael
Apricot-Cranberry Stuffing
6-8oz Butter
1/2 lb. Dried Apricots, Julienne
1/4 Cup Dried Cranberries
1 Medium Red Pepper, Minced
1 Tbsp Fresh Ginger, Minced
2 Medium Oranges, Juiced
1 Crusty Baguette or Quarter of Focaccia 1 tsp fresh thyme, Finely Chopped
1/2 tsp ground allspice 1/2 tsp ground cinnamon 2 eggs, beaten 4 oz Grated Asiago Cheese (Parmesan my be substituted)
12 oz heavy cream (chicken or vegetable broth may be substituted)
1 tbs Kosher Salt
1 tsp White Pepper
Cut the bread into half inch cubes and dry in the oven for 5-7 minutes.Melt the butter in a medium sauce pot. Add onions, garlic, ginger, red peppers and dried spices and cook over medium heat for 5-7 minutes. Stir in the apricots, cranberries and thyme. Add the bread to the vegetable and fruit mixture and stir so that the bread cubes are coated. Add the cream and orange juice and gently cook all the ingredients together, stirring frequently until the liquid is absorbed and the bread is softened. Add additional liquid if necessary. Cool slightly. Add the eggs, cheese, salt and pepper. Place mixture in a well buttered or sprayed medium sized casserole dish, pressing the mixture in evenly. Cover with a lid or foil and bake for 40-45 minutes in a preheated 325 degree oven, removing the lid or foil to brown the top of the stuffing for the last 10 minutes.

Event Spotlight:
Oddmall: Emporium of the Weird
Seattle's most unusual art, craft and culture festival will be coming to the Lynnwood Convention Center this fall. Oddmall: Emporium of the Weird will be open to the public on Sunday, September 22nd from 10am to 6pm. Admission is free.
The festival will feature over 150 local vendors selling unusual, one-of-a-kind items. Artists include driftwood sculpture maker Daniel Medina, Seattle mural artist Ryan Henry Ward, Pandora from Delightfully Deviant, Frankensocks creators Sockpals, and Sugar Skull artist Mallory Milke. Whether you're looking for jewelry, fine art or unique clothing, if it's unusual, they have you covered. Many of the artists are displaying at a show for the first time.
There will be two entertainment stages featuring mentalist Joe Black from America's Got Talent, blue grass band Pickled Okra, sideshow circus troupe Wreckless Freeks and belly dancers. There will also be a costume contest at 4:30pm and the opportunity for couples to get married in the Oddest wedding in Seattle!
"My favorite part of the event is seeing the looks on people's faces when they walk into the Emporium of the Weird and see all the truly unique item and entertainment we are presenting them," said event organizer,

Football Party Planning Tips
Get your friends together to cheer on your favorite team...it's football season!
When having people over to watch a game at your house, here are a few helpful tips to make the party great:
Party Set-Up:
-Make sure the television can be seen by everyone or set-up multiple televisions if your guests will be in multiple rooms.
-Have enough seating for all of your guests and set-up the area so there's enough space to move around. No one wants to be shoulder-to-shoulder for three hours!
-If some of your guests aren't avid football fans or if children are attending, designate a space separate from the viewing area so those that wish to socialize or children playing can do so without interruption or distraction.
-Put out trash cans and recycling bins for easy clean up after the party.
Decorations:
-During football season, football themed decorations can be found at most retail or party stores.
-Plates, cups and napkins in your favorite team's colors also make the event festive.
Food and Beverage:
-Chips, sandwiches and finger foods are easy for guests to snack on while socializing or watching the game.
-Change things up from typical tailgate food, incorporate each team's regional cuisine into the menu. Make some crock pot Jambalaya for the Saints, a cheese platter for the Packers or some deep-dish pizza for the Bears!
-Pack the fridge with an assortment of sodas, juices and waters. Beer and other spirits are also typical for football-related events.

It's Good to be Green
We have adopted the latest methodologies in sustainability, such as automated faucets and flushing systems, as well as a storm water filtration system that returns water to the city aquifer. To help minimize power usage, the building also uses computer controlled lighting and HVAC systems. The system is designed to control lights, heating and cooling during peak event activities.
