Beef en Croute in the Style of

"This wonderful preparation is from my mentor in New York. He won the Bocuse d'Or competition in 1977 with this dish.
It is a high bred version of Beef Wellington. Rather than liver mousse and mushroom duxelle, the roast tenderloin is wrapped in veal and truffle mousse followed by butter pastry. Served on a bed of Perigord sauce.
Usually only made once a year at Restaurant Michael, during New Year's Eve celebration. This year we will do it this Saturday as well.
