Gingery Lentil Soup

We may not be quite dealing with the "Polar Vortex" down here in Florida, but we have definitely had a few soup worthy days!  This lentil soup recipe we found on will warm you up while simultaneously filling you up with fiber & protein!

Ingredients (yields 4 servings):
  • 2 teaspoons of olive oil
  • 3 medium carrots, chopped
  • 1 medium onion, chopped
  • 2 teaspoons of grated peeled fresh ginger
  • 1 teaspoon of minced garlic
  • 1 1/2 teaspoons of curry powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 (14 ounce) cans of fat free, less-sodium chicken broth, plus enough water to equal 4 cups
  • 1 cup of brown lentils, rinsed & drained
  • 1 (14.5 ounce) can of diced tomatoes, drained
Heat oil in a large saucepan over medium heat.  Add carrot & onion, cover & cook for 3 minutes or until softened.

Stir in ginger & garlic and cook for 1 minute.

Add curry, salt & pepper and cook for 30 seconds.

Stir in diluted broth & lentils and bring to a boil. Reduce heat, cover & simmer for 20 to 25 minutes or until lentils are tender.

Stir in tomatoes, cover and simmer for 5 more minutes.

Fill up a bowl and enjoy!
Our patients are the backbone of our practice, we miss you when you're not here!  Be sure to keep in touch with us via social media and our website,!
