You may have seen the
lovely Shoshanah Vaughn at the front desk if you've been in to visit us over the last few weeks and if you have, we're sure she brightened your day! Shoshanah helped us ring in a bright new year, as her first day with us was New Years Eve.  Upbeat & enthusiastic, we're thrilled to have Shoshanah join our Patient Care Specialist team!

Patricia Fombellida is the newest member of our practice and also part of our Patient Care Specialist Team!  Originally from Queens, NY, Patricia has over 15 years of experience working with patients & doctors in the medical field. Her warm smile will make you feel even more at home when visiting our office.
 
Beth Johnston, LMT, practiced here at Village Chiropractic Center from 1998 - 2003 and we are thrilled to welcome her back! Originally from Cleveland, Ohio, Beth has been a Licensed Massage Therapist for 21 years! She specializes in manual lymphatic drainage, active release technique, sports massage & neuromuscular modalities.  Be sure to make an appointment to experience her healing touch!  

Gingery Lentil Soup

We may not be quite dealing with the "Polar Vortex" down here in Florida, but we have definitely had a few soup worthy days!  This lentil soup recipe we found on Health.com will warm you up while simultaneously filling you up with fiber & protein!

Ingredients (yields 4 servings):
  • 2 teaspoons of olive oil
  • 3 medium carrots, chopped
  • 1 medium onion, chopped
  • 2 teaspoons of grated peeled fresh ginger
  • 1 teaspoon of minced garlic
  • 1 1/2 teaspoons of curry powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 (14 ounce) cans of fat free, less-sodium chicken broth, plus enough water to equal 4 cups
  • 1 cup of brown lentils, rinsed & drained
  • 1 (14.5 ounce) can of diced tomatoes, drained
Heat oil in a large saucepan over medium heat.  Add carrot & onion, cover & cook for 3 minutes or until softened.

Stir in ginger & garlic and cook for 1 minute.

Add curry, salt & pepper and cook for 30 seconds.

Stir in diluted broth & lentils and bring to a boil. Reduce heat, cover & simmer for 20 to 25 minutes or until lentils are tender.  

Stir in tomatoes, cover and simmer for 5 more minutes.

Fill up a bowl and enjoy!
