Apples & Pears

The local apple season kicks off with these varieties:
Usually the first official eating apple of the season. Best for fresh use, or as they say in the orchard business, eaten out of hand. Mildly tart flesh is also good for pies and applesauce.
Dark red skin, crisp white flesh.

Thought to be the progeny of the Golden Delicious and Albemarle Pippin apples. A large yellow skinned apple which sometimes has a red blush. It is crisp and slightly sweet with a rich flavor. This apple has only been around for 20 years, but has become a popular early season apple.

Excellent sweet-tart balance with a brown sugar overtone. Texture: Light, crisp and juicy.

Clapp's Favorite ripens about 2 weeks before the popular Bartlet pears, which makes it one of the earlier pears. These pears must be picked before they have fully ripened on the tree or their core will rot along before the consumer has a chance to eat them.

Since these pears do not keep well you probably won't find them in the supermarket, your local farm stand is the best option. But you must act quickly as the season is short for these pears. This is a real juicy and flavorful pear. It has a nice texture to it, not too grainy. If you like Bartlet pears, you are going to love Clapp's Favorite. This pear is good for eating out of hand or in cooking applications. It's one pear I will be sure to pick up when they are in season.

Cut burrata in half and serve in a deep plate, paired with fresh tomatoes, fragrant basil, or peaches and rosemary. Scooped with crusty bread and accompanied by a bottle of wine. Substitute mozzarella with burrata in caprese salad to flare up a traditional dish. Burrata acts as a canvas for culinary creativity.

This soup is delicious. Kids love it and it's a great way to enjoy fresh corn before the season ends.
30 minutes to prepare + the recipe makes 6 hearty patties. They’re great to make ahead and freeze for later. Bake in the oven or reheat on the grill.
I like this broccoli version better than cauliflower. We've been making this recipe a lot lately. If you love buffalo sauce but don't want the greasy chicken wings, this is a satisfying alternative.
