have been supporting Olivewood Gardens through their Environmental Champions program since 2009. Their funding supports our environmental education program for children which provides hands-on, inquiry-based lessons in sustainable agriculture, water conservation, recycling and composting. 
SDG&E also awarded grants to all of the organizations selected as 2011 Eco Ambassador Finalists, including Olivewood Gardens. 
March Planting
 
According to the San Diego Roots 2012 Kitchen Garden Almanac, March is the right time to plant get started on warm-season varieties of beets, carrots, chard, radish, tomatoes, green-beans, corn, and turnips.

The Program Coordinator's (PC) main role will be to manage OWG's core program ensuring a successful kitchen program and educational garden, while encouraging students and visitors to explore the interrelationships between a quality diet, sustainable agriculture and healthy living.

Spring Quarter Internships are now open at Olivewood Gardens! Internships involve both day-to-day responsibilities and short-term projects at Olivewood Gardens. We are seeking energetic individuals who are interested in working with students, knowledgeable about kitchen/garden culture, and excited about nutrition education and environmentalism. Class credit is available.

Three Sisters Corn Muffins

Makes 12 Muffins

Ingredients

1 cup flour

1 cup cornmeal

� tsp salt

2 tsp baking powder

4 Tbsp honey

2 eggs

1 cup reduced fat milk

2 Tbsp oil

2 Tbsp applesauce

1 bunch cilantro, chopped

1 jalape�o, finely chopped

1 ear of fresh corn (or you could use a � cup of canned corn or � cup frozen corn)

� cup grated low-fat cheese (cheddar, colby jack, etc.)

 

Directions

1. Preheat oven to 400˚. Line muffin pan with muffin cups or spray with non-stick spray.

2. Grate cheese, chop cilantro and jalape�o, and remove corn from cob. Set aside.

3. Combine flour, cornmeal, salt, and baking powder in one bowl. Whisk together.

4. Combine honey, eggs, milk, oil, and applesauce in another bowl. Whisk together.

5. Combine dry ingredients and wet ingredients into one bowl and mix together. Do not over mix!

6. Add chopped cilantro and jalape�o to mix.

7. Fill muffin cups 2/3 full. Top with fresh corn kernels and shredded cheese.

8. Bake for 10-15 minutes. Enjoy!
