Winter knocked out our first wine class, but we've got a stellar seminar right behind it.

Nic, our Francophilian Oeophiliac brings us Bordeaux this Tuesday.

Thinking of how you're going to spend your evenings in the dead of the winter? Come join us -- meet some friends, sample fantastic wine and learn something!
This season's courses will take us through May 5 and will include wine, cheese, spirits and artisan beer.
Classes begin at 7 p.m., tickets begin at $20, and students who arrive at class will be rewarded with a $10 coupon good for any purchase the evening of their class.
With the exception of Whiskey Night, all classes will be held in Southboro, 154 Turnpike Road.

Wine Basics

Bordeaux 
Tuesday, Feb. 3, 7 p.m.:
Dive right into the most famous appellation in the world. Francophile Nic has a gift for selecting spot on Bordeaux from the diverse terroir. Mostly reds tasted.

Wine and Chocolate
Tuesday, Feb. 10, 7 p.m.
Perfect timing. With Valentine's Day coming up, this is a must try. Marianne leads this class and displays her love for chocolate and wine.

Cheese with Edi
Tuesday, Feb. 17, 7 p.m.
Cheese with Edi, need we say more? The insanely passionate Edi will explore hard cheeses and blues -- wines and various jams accompany this class.

Wines Under $15
Tuesday, Feb. 24, 7 p.m.
How to best select those hidden gems, find where the values are. Get change back from your $20 -- and a great bottle of wine.

Craft Beer Night
Tuesday, March 3, 7 p.m.
Our good friend Pat has beer knowledge and it needs to come out. Pat explains beer basics, then delves into the world of malt. At least 6 beers sampled.

The Spirit World

Tuesday, March 10, 7 p.m. IN MARLBORO

Is amber colored liquid your favorite? Join our whiskey master as we compare whisky to whiskey. At least 6 spirits tasted.

America's most famous wine regions produce very different wines, From fruit laden Napa Cab to Old World style Sonoma Pinot Noir. At least 6 wines sampled.

Edi loves Riesling almost as much as cheese. And if you think it's just about the sweet -- well, you should go to this class.

Spring means fresh cheese, soft, sweet triple cremes, fresh chevre, bloomy rinds. Spreadable goodness and the jams and wines they go with.

It's getting warmer and that means backyard duties -- barbecue, pool parties -- so what beers are you thinking? Pat explains what goes into each seasonal release.

We close this semester with summer wines. From the season's first Rose, to sparkling and light bodied reds.

Who is Ray Safer?
Why is he Pouring Wine at the Vin Bin?
If you haven't met Ray Safer, you ought to. We convinced Ray to join us and shore up our expanding wine program as we add Southborough to the rotation.
Ray has a gifted wine palette -- having worked in the industry since the last century.
What you'll find with Ray, he loves talking about and hearing about wine almost as much as he loves drinking it.
And his tastes run far and wide, from a value priced Garnacha from Spain, to a vintage Chateaunuef du Pape.
We are fortunate to have Ray host our Friday night tastings. And we urge you to seek his counsel. Ray holds court at the tasting table Thursday through Saturday in Marlboro -- and once Southborough comes on line, he'll be there as well.
Little known trivia about Ray -- his first cousin is singer Paul Anka.

Whiskey Dan?

That's Dan Catanzaro, the Vin Bin's spirits guru. An ex-military man, Dan spends his days haunting the spirits section of the Vin Bin and constantly seeking the best value, best tasting amber colored liquids on the market.
That's him here holding a bottle of
Pappy Van Winkle and Remy Martin Louis XIII, just a couple of selections for his lucky customers.
Dan will talk to you about Scotch, Bourbon, Tequila, Vodka, aged Rum until the cows come home.

After being buffeted by a billowing blow of blizzard conditions, we do what BB, our favorite coach, has taught us to do -- move on.

Aurelio Settimo wines.
We had the pleasure of hosting Tiziana Settimo two years ago in Marlboro. The Piedmontese producer creates all estate Barolo, Dolcetto and a nifty Nebbiolo. 

Among the wines showcased that evening, the 
2010 Rocche dell' Annuziata Barolo, which just earned 95 points by Wine & Spirits.
