April 2015 Newsletter If you have been a regular reader of our newsletters, you probably wonder what happened to our monthly publication schedule. It is true that we have fallen out of our regular schedule by quite a bit, but that does not mean we have not been busy. On the contrary, I would venture to say that we have been busier than ever. One major project we recently completed was the launch of our new website. Although it was unveiled in the fall, there are still numerous features that we are working hard to make available. We will keep you updated through our newsletters, which will again be released on a regular schedule. Another current project underway is our extensive campus renovations. In a few weeks, once numerous improvements are completed, we hope to move back into our main administrative hub. In the meantime it is still business as usual, but just a little distance down the hall in our Market Square campus. As you will see below, these changes are just the beginning. This pioneering food event will showcase the successful and on-going journeys of 5 amazing food entrepreneurs. Moderated by Pacific Rim College founder Todd Howard, this daylong event features Stacey Toews of Level Ground Trading, Angela Moran of Mason Street Farm, Heather Benning (formerly Cunliffe) of Be Love and Café Bliss, Dan Hayes of The London Chef, and Paul Underhill of Rumble. Todd Howard will spend 75-minutes onstage engaging in dialogue with each of these community leaders to help to share their inspirational entrepreneurial journeys. Following the event and beginning at 6pm (tickets sold separately), The London Chef will host a catered mixer that will allow participants to engage in further dialogue and enjoy the culinary creations of Chef Dan Hayes.

The Victoria Chamber of Commerce has named Pacific Rim College as one of 2 finalists for a coveted Business of the Year award. We could not have received this recognition without the hard work and dedication of our staff and faculty over what has now been nearly 10 years. The winner will be announced at the Awards Gala on May 14th.
Holistic Doula Program Returns to Vancouver
PRC's groundbreaking Holistic Doula Certificate program again returns to Vancouver this fall and will also be offered at our main campus in Victoria. This 270-hour program prepares students to work as Prenatal, Birth and Postpartum Doulas. It is the most comprehensive Doula program offered in North America and integrates Eastern and Western medical practices and philosophies. Applications are now being accepted for both locations.

Acupuncture Pediatrics Instructor
We are looking for an instructor to join our faculty of the School of Acupuncture and Oriental Medicine to teach a course on Acupuncture Pediatrics. This course examines common childhood conditions from both biomedical and TCM perspectives, and provides acupuncture treatment strategies. This course is 45 hours in length and is offered during the Summer and Winter semesters. The successful candidate will ideally have a minimum of 3 years experience in TCM, a minimum of 3 years teaching experience at the college level or equivalent, and excellent English verbal and written communication skills. This position will begin in May 2015.
TCM Food Therapy Instructor
We are looking for an instructor to join our faculty of the School of Acupuncture and Oriental Medicine to teach a course on Shi Liao: TCM Food Therapy. Shi Liao is a branch of Chinese Medicine that uses food as preventative and curative therapy. This course examines traditional Chinese foods and diets, Shi Liao principles and philosophies and emphasizes the energetic effect of various foods, teas and spices after consumption. This course is 45 hours in length and is offered during various semesters. PRC Welcomes New Team Members
Assistant Dean, School of Acupuncture and Oriental Medicine
PRC Diploma of Acupuncture and Oriental Medicine graduate and class valedictorian Jeff Feltmate has been named the new Assistant Dean of the School of Acupuncture and Oriental Medicine. Jeff began his career in health care with a Diploma in Massage Therapy from the Canadian College of Massage and Hydrotherapy in Halifax, Nova Scotia. Jeff brings to the college a decade of experience from the digital media industry, with skills in internal communication and education development, client/artist relations, contract guidance and compliance enforcement.
Faculty, School of Holistic Nutrition
Maureen studied Education at the University of Alberta and went on to specialize with autistic, ADD and gifted children, which ignited her passion for optimizing cognitive and behavioural states of being. Diet became her focus in a united effort to improve the potentials within challenged children and their families. Maureen currently practices in Victoria, BC, where her focus is on Darkfield Microscopy and Coagulation Morphology the study of live blood, its anomalies and the impact of toxicity on our systems.

With over 9 years experience, Ari Hershberg has established himself as a go-to corporate speaker and entertainment professional. Ari has worked behind the scenes with speakers, entertainers and celebrities including Guy Kawasaki, Vince Poscente, Doc Hendley and Gerry Dee. After moving to Victoria 3 years ago, Ari became involved with TEDxVictoria as a media coordinator, speaker curator and coach. Ari is the founder of the Victoria Health Wellness and Sustainability Festival that attracts top minds from all over the world.
Learn to Cook with Celebrity Chef Dan Hayes
Join Celebrity Chef Dan Hayes and other leading Victoria chefs for a 15-week Professional Cooking class held at The London Chef, Victoria's premier teaching kitchen. By actively participating, students learn the entire process of food preparation of various cultural-based dishes, primarily using whole foods. The final part of each course includes a long table dining experience where students get to enjoy a multi-course gourmet meal. Dans food is heavily influenced by his classic French training and love of Mediterranean cuisine. He is passionate about sustainable seafood, sharp knives, and the joy of cooking. In addition to running his own kitchen, Dan regularly teaches in Vancouver, Toronto and London, and stars in documentary food series Moosemeat & Marmalade an informative and highly entertaining exploration of culture, worldview and really good food. Student Clinic Accepting Patients
The Student Clinic at Pacific Rim College provides to the public more than 7,000 treatments annually in acupuncture, herbal medicine and holistic nutrition. The Student Clinic is open 5 days a week from 8:15am-6:30pm. All treatments are less than $25, and many are absolutely free.

The Fallacy of RICE
For more than a decade I have maintained the position to patients and audiences that the typical RICE prescription (Rest, Ice, Compression and Elevation) for physical injuries is not only counter-intuitive but also harmful to the healing process. During my university studies, as both a varsity athlete and an Exercise Physiology student in the School of Medicine, I was exposed to RICE therapy, and in particular ice therapy, on a daily basis. I passed many hours during both times of health and of injury immersed from the thighs down in an acerbic stainless steel ice bath. Often doubting some of the dogma of allopathic (Western) medicine, I began to explore the philosophies of holistic medicine.
