Potato Soup
6 potatoes pealed and cubed
1 small onion chopped
3 cans chicken broth
1/4 cup butter
2 1/2 tsp salt
1 tsp cracked black pepper
1 cup half and half
1 cup shredded cheddar cheese
3 T chopped chives
1 8 oz tub sour cream
4 bacon slices cooked and crumbled
1/4 cup cheddar cheese
Combine first six ingredients in a crock pot. Cook on low until potatoes are tender. Mash up a bit and add the rest of the ingredients stirring until mixed and heat a bit longer. Serve with the last bit of cheese on top.
