Life is good for landscape painters in Florida, especially in the northern half. We have a rich diversity of subjects and climates here, a bit less tropical than south Florida and less crowded. I love the seasonal changes in north Florida. I love everything about it from September-April. Summer might be better somewhere else like the coast. I'd love to have a little beach cottage for May-August on the east coast. I would never want to live very far from the coast. If I can't find palm trees, I'm not happy ;>) As far as I'm concerned, rural Florida is our best asset. Let's try to hold onto it by supporting land conservation. http://conserveflorida.org

Tip of the Day-

When using a broiler to cook meat, pre-heat oven until it's really hot. This will sear the outside of the meat and keep the juices in. And don't use a fork to turn  steaks, use thongs or a spatula to prevent juices from leaking out.

Today's Recipe

I love getting recipes from my readers. Please send them to me at lindablondheim@gmail.com

Black Bean Mango Salsa from http://www.reluctantgourmet.com

  • cup cooked black beans - you can cook them yourself but canned beans will work quite nicely.
  • 1 ripe medium sized mango
  • 1 red bell pepper
  • red onion
  • Juice from 3 limes
  • 8 tablespoons pineapple juice
  • 1/3 cup of fresh cilantro
  • 1-tablespoon ground cumin
  • 1 jalapeno chili pepper
  • Salt & freshly ground pepper to taste

Prep the ingredients:

  • Peel & pit the mango and then dice it into inch pieces.
  • Core and seed the bell pepper and dice into small pieces.
  • Peel and dice the onion into equal sized pieces.
  • Squeeze the juice from the limes and have it ready.
  • Chop the cilantro finely.
  • Stem, seed and mince the jalapeno pepper. Be careful not to touch your hands to your eyes after working with this chile pepper.

How to Prepare at Home:

Combine all the ingredients together in one good sized bowl. Taste and adjust seasonings with the salt and pepper. Don't overwork the salsa or it will become a big mush.

You can serve this whenever, but it will taste even better if you let it size a while in the refrigerator up to a few days.
