Roasted Chicken
For years I have roasted whole chickens and they are very good. I love the dark meat and I decided to roast chicken pieces this week instead of a whole roaster. I used chicken thighs and drumsticks, both with skin removed. I did not brown them first. I put them in a cast iron pot with carrots,celery,grape tomatoes and onions, thyme,salt,cracked pepper for seasoning. Roasted them at 300 degrees for about 4 hours. The flavor was deep and rich like no other chicken I've tasted. Awesome!! |
