Kanapaha Trees
Kanapaha Prairie Trees Finished

I've learned to not let anything stop me from my goals. I know the economy stinks and I've been reminded of this by several artists lately who have succumbed to the doom and gloom talk on the networks. I can choose to wring my hands or get on with the business of surviving this economy by cutting back, buying supplies while they are on sales, reusing older frames, selling a lot of studies and small paintings. The bottom line is that we are all in this together and if we care for each other and support each other we will survive. Not in the high style of yesterday, but still with a wonderful life. I'm convinced that if we work hard, and do good work, we will get along just fine. That's my plan and I'm sticking to it. It's sort of like the Field of Dreams. If I turn out good paintings, people will buy. I'm supporting the people and small businesses in my life who I care for. If we all do this we will all survive this economy.

Tip of the Day

You can save a bit of money by using the perferated 1/2 size paper towels. Tearing paper napkins in half will make them last twice as long and the half size is adequate for most meals. The other thing I do is to add a bit of water to liquid hand soap. It works just as well and stretches it even further. Use tougher cuts of meat which are leaner and lower in fat for roasting. Slow roasted, they are tender and delicious.

Today's Recipe

Last night I made green bean casserole again in a low carb version.

2 cans cut green beans drained well.

1/2 cup cream cheese with one half cup shredded cheddar cheese and a bit of milk to thin. Stir and heat until melted together and smooth. Pour over beans and bake for 30 minutes at 350 covered. Remove lid and sprinkle on canned FF onion rings. Brown and serve.  Lower in carbs, higher in protein and very tasty.

Three months ago I went on a high protein low sugar/carb diet. It has not been as hard as I thought it would be and I'm not fanatic about it. i still eat tomatoes and carrots now and then though they have sugar.  I watch labels and try to stay under 5 carbs on things.  I have actually lost 20 pounds since April 23. I'd like to lose a lot more but I'll take whatever I can get. It is encouraging.
