Well, I made it through jury duty unscathed. I was not selected and excused by noon. it was a very interesting experience. Mostly we stood around and waited in the hall. Sometimes we would be allowed to sit and listen during voir dire. Jury duty is never convenient, but I love living in a country where we have constitutional rights and duties. It feels good to live in America, even with all of our problems here. I feel lucky to be a citizen. It also feels great knowing it will be at least a year before i need to do that again. ;>)

Tip of the Day 

One way to help knock out the pain of a sunburn is to do what you'd do with a headache: take aspirin or acetaminophen. Aspirin is especially useful because it also helps with inflammation, especially when taken within 24 hours of the sunburn.

You can also speed your healing by taking a vitamin cocktail for a few days after suffering the burn. Swallow 400-600 mg of Vitamin, 1000-1200 mg of Vitamin C, and 10-15 mg of beta carotene daily. This will help your damaged skin rebuild itself.

Rosemary-Lemon Sandwich Cookies:

(Better Homes & Gardens)

 

Ingredients:

 

1 cup unsalted butter, softened

3/4 cup granulated sugar

2 teaspoon snipped fresh rosemary

2 teaspoon finely shredded lemon peel

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla

2 1/4 cups all-purpose flour

1/2 cup lemon curd

1/2 cup mascarpone cheese

1 tablespoon powdered sugar

 

Directions:

 

Preheat oven to 400 degrees F. In mixing bowl beat butter with electric mixer on medium speed for 30 seconds. Add granulated sugar, rosemary, lemon peel, baking powder and salt. Beat until combined, scraping sides of bowl. Beat in vanilla. Beat in as much of the flour as you can. Stir in remaining flour.

 

Shape dough into 1-inch balls. Place 2 inches apart on a parchment paper-lined cookie sheet. With bottom of glass dipped in sugar flatten to 1/2-inch thickness. Bake 8 minutes or until bottoms are lightly browned. Cool 1 minute. Transfer to wire rack; cool.

 

Meanwhile, in small bowl combine lemon curd and mascarpone cheese. Spread on flat side of half of cookies. Top with remaining cookies, flat side to filling. Sprinkle with powdered sugar. Serve immediately or refrigerate, in layers separated by waxed paper, in airtight container up to 24 hours. Let stand at room temperature for 30 minutes before serving. Sprinkle with powdered sugar. Makes about 20 cookies.
