I was thinking about what really matters in our terrible economy. I am lucky to be surviving as an artist during these tough times. I think we still have to love the wonderful things about life, the beauty and culture. My friends who support me tell me that the paintings offer them an escape from the routine of their lives. It is like taking a little vacation. That's why I think life has to be about more than the economy, the budget and our worry about the future. The symphony orchestra, a live play, and art still have to be important, especially in hard times. We need to surround ourselves with nature, and beauty in whatever form is available. We need to feel good about our world. I stopped watching the news after my mother died. She was obsessed with news and watched it all day long. I have been much more at peace by creating interesting and joyful ways of spending my time.

Tip of the Day 

 

You can save time and be a more efficient cook by portioning out all of the ingredients for a recipe in dishes before you start. Then it's a simple matter of combining ingredients quickly. I use ramekins to put measured seasonings in and larger bowls for larger ingredients. Always read through the recipe before you start so you are familiar with the steps and you know if you have all the ingredients.

 

Today's Recipe

 

 FRITO TACO PIE

 

1 pound ground beef
1/4 cup chopped onion
8 ounces tomato sauce
1-1/4 oz package taco seasoning mix
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
2.25 ounce can sliced ripe olives, drained
8 ounce can crescent roll dough
2 cups coarsely crushed Fritos corn chips, divided
1 cup sour cream
4 ounce can chopped green chiles
1-1/4 cups shredded cheddar cheese

Optional:  Salsa, avocado slices, sour cream, cilantro

 

Heat oven to 375 degrees.  In a large skillet, cook beef and onion over medium heat until meat is browned; pour off any accumulated drippings.  Stir in tomato sauce, seasoning mix, cumin, oregano, and olives.  Unroll crescent roll dough to cover bottom of ungreased 9-by-13-inch pan, gently patting the perforated seams of dough together.  Sprinkle 1 cup of the crushed fritos on top of dough.  Spoon on meat mixture.  Stir together sour cream and green chiles; spread over meat mixture.  Sprinkle 1 cup remaining fritos over sour cream; top evenly with cheddar cheese.  Bake for 25-30 minutes, or until crust is cooked.  Serve with optional ingredients, if desired.  Serves 6-8.

I have invited three Craft artisans to join me for the day. We will have handmade jewelry, handmade soaps and wash cloths and handmade hand bags along with my paintings.
