Meet Sarah Lucander, PLP Senior and Guest Columnist

Hello Fellow Students of Pine Lake Preparatory!

My name is Sarah Lucander and I'm a senior in the Upper School. My first year at Pine Lake began in 2011, and the years have flown by since.

I have been involved in many extra-curricular activities throughout the years, including the National Art Honor Society, Junior Civitan, and the Spanish Club. I love art and enjoy letting my creative side show, so it has been fun for me to help paint pictures for charities, and create murals for the Upper School. For me, writing is another way to express myself  so that is what I choose to learn more about through the Pride Paper and Pride Project.

During my Junior year I wrote my Pride Paper, and this year I began my Pride Project. Both the Paper and the Project are centered around learning about a career that one is interested in. I choose a career in Journalism and Writing because as a young child English was always my favorite class.

In the coming months, I'll be writing columns about Internet safety, book reviews and living a healthy lifestyle.

Sincerely,
Sarah Lucander

On Tuesday, the 5th Grade and their families came together at the A.C.C. to celebrate their participation in the Drug Resistance Awareness Education (D.A.R.E.) program, offered by Mooresville Police Department. The students were taught about several dangers affecting adolescents such as drugs, smoking, bullying and how to effectively avoid them.

Mrs. Kurtz coordinated the program, which was taught by Officer Richard Kratz.

The capstone of the program was an essay contest, for which the winner, Sutherland Fox-Tran rode away with a new bike. Congrats, Sutherland!

NovemberFest Chili Cookoff Winning Recipe

The weather outside is chilly, and perfect for making...chili! We caught up with the winner of this year's cookoff, Sunny Hager, to get her prize winning recipe.

"I don't think chili existed in China. When I made chili for the chili cook-off, it was really my first time. So when I received the news that I had won, I was very surprised," she said.

Sunny started with an online recipe and made some modifications to it.

The final recipe follows:

_____________________________________________________

Sunny's Chili Recipe

3 tablespoons vegetable oil

2 medium yellow onions, medium dice

1 medium red bell pepper, medium dice

6 medium garlic cloves, finely chopped

1/4 cup chili powder

1 tablespoon ground cumin

2 pounds lean ground beef

1 1/2 teaspoons kosher salt, plus more as needed

1 (28-ounce) can diced tomatoes

1 (14-ounce) can tomato sauce

2 (15-ounce) cans kidney beans, drained and rinsed or 1 can of dark red kidney beans and 1 can of pinto beans

1/4 cup coarsely chopped fresh jalapeos

Total Time: 45 mins, plus 6 to 8 hrs in the slow cooker

Makes: 6 servings

________________________________________________________________

Instructions

  1. Heat the oil in a large frying pan over medium heat until shimmering. Add the onions and bell pepper, season with salt, and cook, stirring occasionally, until softened, about 8 minutes.
  2. Add the garlic, chili powder, and cumin, stir to coat the vegetables, and cook until fragrant, about 1 minute. Add the ground beef and measured salt and cook, breaking the meat into small pieces with a wooden spoon, until the beef is no longer pink, about 7 minutes.
  3. Transfer the mixture to the slow cooker, add the diced tomatoes and their juices, tomato sauce, and beans, and stir to combine. Cover and cook until the chili thickens and the flavors meld, about 8 hours on low or 6 hours on high.
  4. Stir in the jalapeos or green chiles. Taste and season with salt as needed, and serve with either corn bread or oyster crackers.
