Hurricane Harvey Relief - Global Giving

I'm sending out this newsletter a day early to announce we are partnering with Global Giving and the Hurricane Harvey Relief Fund to assist the flood victims in Houston.

Crews in Texas have found the bodies of over 40 victims of Harvey's wrath, and warned that the number of dead would almost certainly soar as water levels across much of the Houston area start to recede. 

FEMA administrator Brock Long said more than 230 shelters are operating in Texas, housing more than 30,000 people. Let's support the Harvey Relief Fund together.

Chick n Pasta Alfredo 

Dairy free Alfredo Sauce in 15 minutes! Creamy, satisfying and flavorful. I served with  Edamame Spaghetti,  Chick n Strips (Beyond Meat brand pictured) mushrooms and broccoli.

  • 1 medium sweet onion, chopped
  • 2-3 large garlic cloves, minced
  • 2 Tbls white wine
  • 2 cups + 2 Tbls. vegetable broth  
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper
  • 1/2 heaping cup roasted unsalted cashews (soaked for 8 hrs in hot water if you don't have a high powered blender)
  • 1-2 tsp lemon juice (don't omit, as this omits any cashew flavor!)
  • 1/4 cup nutritional yeast (I used a little more)
  • 4 oz mushrooms, sauteed
  • 1 crown broccoli, broken into bite sized pieces
  • 6 oz. Beyond Meat Grilled Strips
  • Pasta of your choice - I used Edamame Spaghetti

Saute onion in 1 Tbls. Olive oil, over medium heat. Sprinkle with Salt and Pepper. Saute for 4-5 minutes until translucent. Add 2 Tbls wine. Let reduce until wine is gone. Add 3/4 cup vegetable stock. Cook about 10 minutes until all liquid is evaporated. Add garlic, saute 3 minutes, add 1/4 cup vege broth. Cook until veges are creamy and liquid is gone.

Add mixture to Vitamix or other high powered blender (will not work in food processor). If you don't have high powered blender, be sure to soak cashews at least 8 hrs. or sauce will be grainy.



Add remaining cup of broth, salt, pepper, cashews, lemon juice, and nutritional yeast (I found yeast at Trader Joe's). Blend on high for 2 minutes until creamy. Taste to see if you need more lemon juice. 

Saute mushrooms, broccoli in 1 tbls olive oil over medium heat 5-6 minutes. Add a little broth (2 Tbls) and steam the last 2 minutes. Add strips to pan and heat 3 minutes. Don't overcook the strips like I did the first time. It made them too chewy.

Serve vege's, strips, and alfredo sauce over your choice of pasta. I used Edamame Pasta purchased at Costco. Cooks in 3-4 minutes!
