Celebrate Independence Day with these Patriotic Picks!

Greetings!

The Fourth of July means Summer, a day off from work, and most likely a gathering with friends and family. It's a celebration of America and the freedoms we enjoy and also a chance to show our patriotism. Here at Fairfield Cheese Company we support American artisan cheesemakers everyday by filling our case with their outstanding cheese. They rival the best cheeses in Europe and we love introducing them to all of you. By supporting the American cheesemaker we support the family farm and entire communities here in the United States. This week we are highlighting three of our favorites and we've stocked our cases with the perfect cheeses to pair with the spirit of The Fourth of July. I venture to say we have the BEST American artisanal cheese selection in the area.

Have a safe and Happy Fourth!

   Across The Pond

Last week I had the pleasure of chatting with cheesemonger Amy Thompson from Lucy's Whey. She was at the New Amsterdam Market sampling out cheese made by Keeley McGarr in upstate NY. One bite and I was hooked. Across the Pond is Keeley's signature cheese. It is made from the raw cow's milk of her family's dairy farm and it has a washed rind. Slightly pungent in aroma, it gives way to a mildly buttery, fruity flavor with notes of grass and earth. I love its long tangy finish and spreadable consistency.  We'd pair it with a Riesling from the Finger Lakes.

   Lazy Lady's La Petite Tomme

A delicious little round of creamy, brie-like goat cheese with a thin bloomy rind.  These little tommes are perfect Summer eating; smooth, rich, and silky in texture with a goaty tang and mushroom undertones. Lazy Lady Farm is owned by Laini Fondiller in Vermont and is completely off the grid. We think she makes some of the best goat's milk cheeses we've tasted!

   Caveman Blue
Caveman Blue is a rich, complex blue that is deliciously sweet & fruity with slight vanilla tones and a texture of butter and crystals. It has nuances of beef and bacon & grass and hay, and is  firm & lower in moisture with a natural rind featuring extensive blue mold development. Made by Rogue Creamery in Oregon, Caveman pairs well with big red wines like Zinfandel and Cabernet Sauvignon.
