Wild Hive Farm's Whole Wheat Buttermilk Biscuits 

Greenmarket's Regional Grains Project would like to introduce a new series highlighting some of the outstanding baked goods being sold at Greenmarket by our farmers and bakers. Every few weeks we will feature a delicious item found at Greenmarket that exemplifies the quality of our bakers' products and their commitment to baking with locally-grown grain.

For the first installment in our series, we checked out Wild Hive Farm's whole wheat biscuit. This biscuit's rich character and a special story belie its unassuming appearance. Wild Hive's biscuit is made with soft white winter wheat that is grown and milled on-farm. Winter wheat is a great addition to the Northeast's farmscape, since it acts as both a cover crop during the winter as well as a cash crop come summer, when it is harvested.

Because Wild Hive uses the freshest flour possible, their recipes use minimal sugars and fats in order to put the distinctive flavors of freshly-milled grains on full display. Nowhere is their approach to baking better demonstrated than in their whole wheat buttermilk biscuit. This biscuit is a winner at breakfast, toasted with butter and honey, as well as after dinner served with whipped cream and strawberries.
