Salad for Dinner: Complete Meals for All Seasons

Chris Steighner, Rizzoli's food editor, shares a seasonal recipe from Salad for Dinner that offers up a perfect celebration of late spring. It makes use of some of the gems that are showing up at farmer's markets right now: green garlic, spinach, mint, peas, and pea leaves. Yes, you can eat the leaves--remove them from the tendrils (the tender leafy tops of pea plants), and enjoy in any salad.

 

Pea and Orecchiette Salad with Perlini Mozzarella and Mint

4 servings

 

10 ounces fresh, shucked English peas (about 2 cups), or 2 cups thawed frozen peas

6 ounces sugar snap peas or snow pea pods (about 2 cups)

6 ounces orecchiette or conchiglie (shell) pasta (about 2 cups)

4 tablespoons extra virgin olive oil, divided

3 tablespoons white balsamic vinegar, divided

1 tablespoon minced green garlic or  

1 garlic clove, pressed

1 (8-ounce) container perlini (fresh mozzarella pearls), drained

1 cup pea leaves or baby spinach leaves

2 green onions, thinly sliced

2 tablespoons minced fresh mint

 

Bring a large saucepan of generously salted water to a boil. Add both peas and boil until just tender, about 11/2 minutes. Using a slotted spoon, transfer the peas to a colander set over a bowl (maintain boiling water in the saucepan). Rinse the peas briefly under cold water to cool. Drain well.

 

Add the pasta to the boiling water and cook until tender but still firm to the bite, about  

10 minutes. Drain the pasta (do not rinse) and transfer it to a large bowl.

 

Add 2 tablespoons of olive oil, 1 tablespoon of vinegar, and the garlic to the hot pasta and stir to combine. Let the pasta stand until it cools to room temperature.

 

Add the peas, perlini, pea leaves, green onions, and mint to the pasta. Add the remaining  

2 tablespoons olive oil and 2 tablespoons vinegar. Season the salad to taste with salt and pepper and mix well. Serve at room temperature.
