New evidence has been published in the journal Nature about a link between choline in the diet and how this substance is changed by bacteria in the gut (probably the bad ones) into a substance that promotes atherosclerosis. Atherosclerosis (hardening of the arteries) is present 10 times more often in obese people compared with those who are not obese. As evidence continues to develop on the connection between obesity and an abnormal balance of gut bacteria, it is important to understand how a shift to a plant based diet is more important than ever in reducing dietary choline.
