Matt, an owner of Genuine Wines, a small boutique wine distributor, will be on hand to pour a line-up of super wines, from Galicia, Sancerre, the Canary Islands and Rioja (from the iconic Lopez de Heredia). All the wines are made sustainably.  Also, knowing Matt, he's likely to bring a special bottle just for the fun of it.....a nice surprise. 

What we call "Factory Wines"
We avoid factory wines, in part, because of their:
" obsession with high yields, which meant that farming practices were dictated less by biological balance than by balance sheets", with "little interest in farming beyond the current crop", just "watering vines, adding fertilizer, anything to ensure a solid harvest....with little concern for long-term impacts."

Wines with Hangtime
 
Jeff  is the founder and owner of Hangtime, a small distributor of
boutique sustainable wines. He really knows his stuff and has a great collection of interesting wines. On Saturday he starts off with the "other white Burgundy", Aligote, crisp and fresh with notes of apple and pear. It's paired with Nettle Meadow Chevre with Garlic and Olive Oil. Staying in Burgundy, the next wine is a Premier Cru Chablis, a rich and elegant chardonnay with tropical fruit flavors and no oak. Try it with Sweet Onion and Créme Fraiche Flatbread. The third is a soft yet intense Erbaluce from Piemonte, with notes of peach and watermelon, with a wonderful Prosciutto, Apple and Cheddar Monte Cristo Sandwich.
 
The first red is a fantastic new Pinot Noir from Willamette. Recently, we tasted it, loved it, and brought it in to Pairings. Since then, this wine from Colene Clemens has received great reviews and is sold out both in MA and the winery. What we have is what there is....so stop in and taste it while it's still available. The pairing is the excellent Alp Blossom, a gruyere-like cheese from Austria the is wrapped in edible alp blossoms. Then it's on to Southwestern France with a blend of your favorite grapes, Duras, Gamay and Braucol. Fruity, spicy and perfumy with soft tannins, it'll pair well with Paté Forestier, with its savory mushroom flavors. Finish up with Shannon's High Valley Cabernet Sauvignon, a full-flavored Cab with complex notes of dried cherry, black pepper and Cedar, perfect with Shropshire Blue (see below).

Shropshire Blue
Shropshire blue is a wonderful cheese for Halloween along with Mimolette, a gouda-like firm cheese from northern France.  Both are bright orange and delicious. They will "serve up a cheese board that's on theme" for Halloween.
 
Shropshire blue is from Colston Bassett Dairy out of Nottinghamshire, UK.  It's a pasteurized cow's milk stilton, slightly creamier than a "normal" stilton and a tiny bit less assertive.  It gets it's color from Annatto, an orange-red condiment and natural food coloring derived from the seeds of the achiote tree native to tropical regions like Mexico and Brazil.  Anatto also imparts a slight aroma and flavor. On your cheese plate, serve Shropshire Blue with honey and thick crackers.  For added orange color add the Mimolette, a washed-rind cheese such as Saint Nectaire, some cantaloupe, prosciutto, and apricots. Yum!

Giraudon Vigerons, Aligote, Crisp White Burgundy, Fr, Y, Crisp and fresh, with refreshing notes of lemon-along with apple and pear, this wine has all of the elegance and grace that has become synonymous with Burgundy            
Nettle Meadow Chevre with Garlic and Olive Oil
From New York, a spreadable goat's milk cheese with sweet garlic and olive oil. 
Gautheron Chablis Premier Cru, Les Forneaux ChardonnayCrisp White, Burgundy, Fr, "Rich and elegant, with ripe tropical fruit and a bit of apricot; rich and round, with more exotic fruit and solid minerals, a hint apple-pie and an enjoyable length"            
Sweet Onion and Crème Fraiche Flatbreads
From California - delicious!
Del Signore Riflessi, Erbaluce, Soft White,  Piemonte, Italy, Y, Intense fruity aroma with peaches and watermelon predominance, hints of dandelion and elder flowers, lightly aromatic with golden apple and electric acidity on the finish            
Prosciutto, Apple and Cheddar Monte Cristo Sandwich
This is basically a cheesy, eggy, French toast.
Colene Clemens Dopp Creek Willamette, Pinot Noir, Smooth Red Willamette, OR, Y, Lovely aromatics with scents and flavors of strawberries, raspberries and cherries. The flavors hang on beautifully, set against framing tannins and supporting acidity. The finish brings a pretty touch of baking spices
Alp Blossom
From Austria, a gruyere-like cheese is wrapped in beautiful and edible alp blossoms.
L'Enclos Braves Gaiillac Rouge, Duras, Gamay and Braucol, Bold Red SW, France, "Like liquid dark velvet, with a crystal minerality that lasts for a ridiculously long time", fruity, spicy and perfumy, with soft tannins and a nice balance"           
Mushroom Pate (Forestier)
Foraged mushrooms add a nice, savory taste to this country-style pate.
 
High Valley Shannon, Cabernet Sauvignon, Bold Red Lake Country, CA, Y, Starts with aromas of dried cherry, black pepper and cedar. The full-bodied flavors and textured finish are enhanced by notes of cherries, herbs and toasted oak.            
Shropshire Blue
A wonderful blue stilton for Halloween.  Creamy and very flavorful, lighter than other Stiltons.
