The energy in downtown Easton was palpable this week as the city prepared for the Market's return to the circle. After a long, cold winter, it's finally time to celebrate the spring harvest. Join us tomorrow as we kick off the Easton Farmers' Market's 266th season, welcoming new vendors and reconnecting with all our regulars. Feed your soul with the sights, sounds and tastes of of the market!

Springtime makes the best grazing, and grass makes the best cheese! As always, Valley Milkhouse's selection of award-winning fresh, soft-ripened and aged cheeses is made from 100% grassfed certified organic milk from dairy partner Spring Creek Farm in Berks County. AND, this season, Valley Milkhouse is excited to be offering several guest cheeses from nearby family farms including Birchrun Hills Farm, Dove Song Dairy and Wholesome Dairy Farm, all raising happy cows and goats on local pastures!

Easton, we’ve missed you this winter! We are back with tasty Market Breakfast sandwiches featuring Breakaway farms Bacon, Sausage and Eggs. We’ll kick off the season with our take on the classics, Bacon, Egg & Cheese, Sausage, Egg & Cheese, and Egg & Cheese all on a buttery toasted brioche roll. We still will be serving our nearly famous breakfast burrito with crumbled Breakaway Farms sausage, farm fresh eggs, sharp cheddar, onions, peppers and special sauce. Stay for lunch where we will be serving our delicious crab cake sandwiches, chicken tender baskets, French fries and more. Wash it all down with our fresh squeezed lemonade. Liza grew up in a family that has a talent for art and cooking. She is a registered dietitian who has a degree in pastry from the Culinary Institute of America and a Bachelor's Degree in Nutrition from Cedar Crest College. It all adds up to delicious baked goods with the best ingredients in mind... like fresh baked pies and quiche made with all butter crust and chock full of local produce, and farm-fresh eggs and cheese.

Liza makes her debut this week with luscious pies like Apple Crumb, Strawberry Rhubarb pie and Key Lime. Quiches include Quiche Lorraine, Asparagus Goat Cheese, and Mushroom Gruyere. And as her business name suggests, plenty of cakes, and other treats too! CollegeHillCakes.com

Just Veggn'
JUST VEGGN” was created by founder Angie Ritter in San Leandro, California in 2013. Just Veggn’s sweet spot was farmer’s markets in San Francisco and Mission Bay. Angie, originally from Bethlehem owned the Market Street Deli and Angie’s Kitchen before moving to California.

Angie’s signature (and dare we say famous) veggie “vegan” burgers are made with the highest quality organic ingredients, nutrient filled, low fat and high in protein and fiber. But most importantly, they are outta this world, delicious!

You can enjoy Just Veggn' Vegan Veggie Burgers as a burger on a a variety of breads (including gluten free) and served with a side salad, or on a tossed salad. with homemade dressings and toppings. They are also available frozen for take-home!

So... opening day of the market just happens to fall on Cinco de Mayo, and that’s great news for our new vendor Tierra de Fuego! Think... fresh made quacamole - prepared on site, homemade empanades, pan de queso and more! Stop by and see Manuel for a little taste of Columbia!

Farmstand Recipes
Need a quick lunch, or a healthy side for dinner? The Easton Public Market's Farmstand is joining the market, debutting their new product line of vegetarian and vegan salads and snacks! This weekend, they will have Harvest Slaw, Kale & Quinoa Power Salad, Sunshine Salad, Garden Salad with Greek Vinaigrette and Almond and Oat Energy Bites!  Be sure to try a sample and ask about their soups, sides, and other snacks!

Farmstand Recipes are also available Wednesday-Sunday at the Highmark Farmstand inside the Easton Public Market.

For opening day, Jenny and crew will be offering $1 off on 9oz jar of their famous ginger garlic sauce. And for the first time, serving up hot cooked Singapore Rice Noodles! These delightful rice noodles are spiced with curry and stir fried with vegetables (vegan) or shrimp/egg. Enjoy them at the market or get 'em to go. The soup du jour is creamy curried sweet potato with a coconut milk base. Try a refreshing jicama watermelon cucumber salad with tamarind lime dressing or their famous Malaysian rice pudding. High Street studio is where it began. Friends and bandmates Bill Carr, Chris Goffi, and Chris Kline decided to share their love of acoustic Americana / folk music and vocal harmonies with the Lehigh Valley and High Street House Band began. 

They will share their music on Opening Day at EFM from 11 am to 1 pm. So come on down for the ribbon cutting ceremony at 10 am and then head to the Music Tent on the north lawn of the Circle to hear one of Easton's most popular bands 'turnip the beet!.

The Greater Valley YMCA Forks Education Center's teaching staff will kick off children's activities for the 2018 season at EFM. The Y team will help children participate in a simple beehive printmaking activity, complete with bumblebee stickers. This activity is great for developing hand-eye coordination and fine motor skills.
