Each month I write this column to let each of you know about special events or competitions or the pressing issues facing the club and our growth. This month, our family is facing an emergency that's going to require much more of my time.  I'll keep this short.

I work on ASH things every day. Sometimes a little, other days a lot. When I decided to be on the ASH board, I made it a priority to surround myself with capable people, create plans and strategies to get others involved. We are a large enough organization to ensure that no one member is indispensable and this includes me. 

We have some exciting changes coming up and we have a growing number of resources to help us fund our plans for a new clubhouse and financial independence. That said, we need you to step up. 

If you have ideas for how we can best address your needs as a homebrewer, YOU need to let us know. Present your idea, let us know what you need and we can make it happen.

We can open the clubhouse for training or meetings. We can fund your idea or get our sponsors and other industry folks involved. We can spread the word and get other members excited about it or enlist their help as volunteers. 

Our own Oktoberfest Festival and Competition was an idea out forth by a few members many years ago. They forged a plan and the board set that plan into action. I mention this because, Barry Tingleff tells me that we are still uncomfortably short on volunteer help.

I'm going to lean on the rest of the Board and our Committee members to do the club's business if I am out for an extended period. This is as your club as much as mine and so I ask that you add your voice and your time.

Homebrewer of the Year / AHA Club Only Hopefully by the time you read this, Round 7 (Light Hybrid Beer) will be judged. Unfortunately at this point I have no further news about this round.

Since we have all been brewing furiously for Oktoberfest at the end of this month, Round 8 will not be due until the general meeting on Tuesday, October 16. This will be specifically for sub-category 19A, Old Ale. Again this is for Club Only as well, so we will need THREE bottles, one to judge and two to send off to the AHA if you win. As always, please include BOTTLE LABELS attached to each bottle with rubber bands and ENTRY FORMS.

Oktoberfest Competition

This is the biggest homebrew competition in the state with over 300 entries last year. It is open to all styles including beer, mead, and cider. Odell Brewing Company has once again been gracious enough to offer the opportunity to brew the best of show winning recipe on their five barrel pilot system with Doug Odell including two nights at the Armstrong Hotel in Fort Collins, CO and a $500 travel voucher. The entry deadline this year is September 26th. Entries can be dropped off at the September general meeting on the 18th at the clubhouse or at your local homebrew shop. All entries must be submitted using the online registration system, No Exceptions! Any entries submitted on paper forms will not be judged. Please Note: We are requesting 3 bottles per entry this year to allow queued judging flights.

Judging will be on Saturday, September 29th and Sunday, September 30th. If you wish to volunteer to judge or steward, please register an account with the online system and be sure to select which days you are available. It is also helpful if you can specify which categories you feel you are best qualified to judge. As always, this is a BJCP-sanctioned event, so here is your chance for those elusive BJCP judging points. You don't have to be available both days to judge; just one day will help. BJCP certification is also not necessary, just a willingness to judge or steward. No matter what your experience level is, we will be able to find a place for you. This is going to be another record breaking year for this competition, so we are going to need another record breaking number of judges to match. 

Salt River Fields Homebrew Contest at Oktoberfest (Updated from last month's newsletter)  

Because we have nothing else going on during the last week of September and first week of October (that's a joke by the way), we have decided to join with Salt River Fields in Scottsdale to host another homebrew competition. For those who don't know, Salt River Fields at Talking Stick is the spring training home of the Arizona Diamondbacks and Colorado Rockies located on the Salt River Pima-Maricopa Indian Community next to the Talking Stick Golf Club and Talking Stick Resort. Because the Diamondbacks and Rockies do not play there in October, last year they decided to use the facility to host their own Oktoberfest. This year they wanted to expand that event to include a homebrew competition and they approached ASH to help run it.

This is a full-blown, beer only (no mead or cider), BJCP sanctioned homebrew competition similar to our own Oktoberfest competition. They will be accepting entries from Monday, October 1st through Friday, October 5th. You can either mail the entries in or drop them off at Salt River Fields, 7555 N. Pima Rd., Scottsdale, AZ 85258. I will also be collecting entries at ASH's Oktoberfest on Saturday, October 6th. There is no entry fee; in fact, they are offering four tickets to the festival for each brewer who enters (that's per brewer, not entry). The judging will take place at Salt River Fields on Friday, October 12th at 6pm and Saturday, October 13th at 9am. The Best of Show prize is a $500 airline voucher and $200 hotel voucher to Chippewa Falls, WI to tour the Leinenkugel Brewery and will be announced from one of their music stages later that night. Judging will be a little different than usual due to time constraints. We are going to do one session the night before the festival to try to get a head start and then finish up the day of the festival. Due to the unusual scheduling, I am going to need a lot of help on this. Anybody wishing to help judge or steward should register an account with the online system and be sure to select which days you are available. It is also helpful if you can specify which categories you feel you are best qualified to judge. You do not have to be available both days; either day will be fine. And don't worry about BJCP certification or prior experience; we will find a place for you. All we ask is an interest in judging beer. I know this is close on the heels of ASH's Oktoberfest competition, so in addition to the BJCP points, Salt River Fields has added the further incentive of four tickets to the festival for each judge and steward as well. I have those tickets in my possession, so contact me if you are entering the competition or want to judge or steward and I will get them to you. We have heard complaints for years about there not being enough competitions in Arizona to earn BJCP points. We are doing our best to add more; don't miss the opportunity when it arises.

This is the first of hopefully many events in cooperation with Salt River Fields, so please help us get this off to a great start by entering and judging the competition. There should be no excuses for lack of beer since this is so close to our own Oktoberfest competition. While you're bottling up entries for that, bottle up three extra for this one too.

Oktoberfest Committee: Event: Saturday, October 6.

Purpose: plan and organize food, venue, supplies for event, raffle, promotion, kids area, music.    

Report:We need more volunteers. We still need quite  a few volunteers at the front gate, lots more on the raffle & a few more for tear down. The more people we have the lighter the load for everyone. Please respond on the website with name, time available & preference of station. First response gets first choice of where they get placed. 50 volunteers would be better as a trial run for AmeriCan Fest this spring. Thanks for all your help.

Capital Campaign Committee   

Purpose: Identifying and reviewing revenue opportunities for ASH in their quest for a new clubhouse.

The committee also is moving forward with the first annual "ASHies" - awards honoring the Arizona beer community. Those interested in being involved with the awards should contact Dennis Tsonis.

Education Committee:

Purpose: The mission of the Education Committee is to engage, inspire, and educate ASH members and the general public about the art and science of beer.
Update: Members of the committee will have an instructional extract brewout on Tuesday, Sept 25 10:30-2 at Brewers Connection in Tempe. The committee is planning an all-grain brew for later in the year which will be on a Saturday at Dave Conz's house.

Holiday Party Committee:  

Event is in early December. Need committee members to find location for Holiday party. Arrange for, purchase, deliver, and setup raffle prizes. Arrange for food, water, soda, etc. Entertainment. Setup and clean up of event space. Contact Thomas Boggan, editor@azhomebrewers.org, to volunteer for the Holiday Party Committee.

  

Merchandise and Promotion: 
Purpose: designing new products for the club, coming up with new ideas for t-shirts and other merchandise. Also organizing and ordering new merchandise. Any graphic designers or merchandise savvy individuals are welcome to join, or any members that have some ideas feel free to pass them Jason's way. Always can use new ideas, and would like to take members ideas and bring them to life.
  

 

Membership Committee:
Purpose: acquire new members, maintain relationship with current members, and welcoming new members to the ASH club. Develop information to deliver to new members, greet new members at club functions and introduce new members to fellow ASHers, help new members feel at home during meetings and club functions.

ASH/OHSO Barrel Project



The Goal: Russian Imperial Stout in a 55 gallon Bourbon Barrel

  1. Formulate RIS recipe that has a ABV and IBU on the lower end of the BJCP Style Guideline
  2. Beer should have chocolate character.
  3. Stick to grain. No adjuncts. Let the barrel do the work. 
  4. Get to brewing
  5. Judge and set score criteria to get into the blend.
  6. Blend
  7. Wait.
  8. Divide the goods. Save bottles for club entry at NHC.

Top score getters will probably get more of their beers blended. Also they will be among those that get to brew the commercial version at OHSO.

Submit recipe ideas now. We need to get crackulating. OHSO's brewer Johann recommends getting your RIS in the fermenter by early November. 

Johann would like something on the lower end of the ABV and IBU spectrum that has a little less body and more chocolate notes than anise. The reason being that this is probably going to have plenty of Bourbon notes (this being the first filling). Also, DO NOT CARBONATE. Leave your beers uncarbonated.

There is also the timing. We need finished beer ASAP so that we can judge, formulate and fill when the barrel comes in wet, probably early December around the time of the ASH Holiday Party.

After this brew, this is going to be our barrel. We can decide on other batches going forward. The sooner we fill this barrel the better.

 

ASH Brewing Demo at Angel's Trumpet Alehouse Grand Opening



As if you needed another excuse to visit Angels Trumpet Ale House, you can check out ASH members Scott Brady and Marco Hernandez as they brew a 5 gallon batch during Angels grand opening this Saturday, Sept 15. The guys will begin setting up at 10am and begin actually brewing at 11am. Scott and Marco were the 2011 ASH Oktoberfest Best in Show winners and brewed their prize winning beer at Odell earlier this year. This will be quite the opportunity for new (and even experienced, hey, you never stop learning right?) brewers to learn, watch, ask questions and take breaks inside for a beer.

ASH at Santan Brewing Oktoberfest



ASH will have a booth at the Santan Oktoberfest in downtown Chandler Saturday, September 29. The event starts at 12pm and will be at the Dr. AJ Chandler Park west 3 S. San Marcos Place.

We'll talk about the club, sell t-shirts, memberships, and ASH items, and have a brewing demonstration. We need volunteers to help set up, tear down, and work the booth during the event. Contact vice president Jerry van West to volunteer-- vicepresident@azhomebrewers.org.

 

Food+Beer

Food+Beer has gotten official contributors. Julie Thompson, along with Gidi Goldberg and Rich Thompson, formed the group Cooking with Beer. Their mission: bring beer into the kitchen and showcase how beer and food can go together both in recipes and pairing with meals. 

  

The Autumn season is nearly upon us and the holiday season is right around the corner. That means holiday seasonal beer! From the rich pumpkin porters to the Christmas ales and everything in between, this season is the perfect time to cook with beer.

First to start with is a pie traditional to all the end of the year festivities. It works from Halloween straight through the end of the season and that is Pumpkin Pie!


Seasonal Pumpkin Pie:

Ingredients:
1 (15 ounce) can pumpkin
1 (14ounce ) can sweetened condensed milk
2 large eggs
4 ounces pumpkin porter
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9 inch) unbaked pie crust (chocolate recomended)

Directions:
1. Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs, beer(preferably room temperature), spices, and salt in a medium bowl until smooth. pour into crust and bake 15 minutes.
2. Reduce oven temperature to 350 degrees F. and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. cool. Store left overs covered in refrigerator.


Another staple around the holiday season is whip cream. Of course you could buy the stuff in a can from the grocery store or even the substance that comes in a tub fro the frozen section but try this homemade recipe below that incorporates beer into a traditional whip cream recipe and is sure to be a crowd pleaser!!

White Chocolate Whip Cream:

Ingredients:

1 pint heavy whipping cream
1 tablespoon granulated sugar
1 teaspoon vanilla extract
1/4 cup white chocolate chips
2 tablespoons Oktoberfest beer

Directions:
1. Place the white chocolate chips and beer in a microwave safe bowl and microwave an high 30-4 seconds until melted and smooth stirring every 20 seconds.
2. Put heavy cream, granulated sugar, and vanilla extract in a bowl and whisk on medium speed. As it is whisking drizzle in white chocolate.
3. Once the white chocolate is mixed in thoroughly, increase speed to high and whisk until stiff peaks form. 3-5 minutes.

You may now use the whip cream as a garnish on your favorite pie or just eat it with a spoon! I do however find that if you place the whip cream in a sealed container and freeze for atleast 3 hours the whipped topping doubles as a substitute for ice cream in a lot of great dishes.

So no matter what the plans are for this festive season, these 2 recipes are sure to be a crowd pleaser and will impress even those fans who love the fall for the football as well as the food.

5 Gallon Whiskey Barrel Group Buy

August General Meeting Recap

August was our Mead Meeting. Barry Weeg led a great panel discussion with Barry Tingleff, Steve McKellips, Scott Barmann, and Ron Kloth. Each member of the panel had a different approach to making meads. One surprise? Bacon mead by Ron Kloth.
   
OHSO Brewery owner Jon Lane and brewer Johann Fultz announced the ASH/OHSO Barrel Project. We want to get as many homebrewers' brews as possible into 53 gal previous bourbon barrel. The base beer is a Russian Imperial Stout. Entries will be judge by club BJCP judges prior to being added to the barrel. Bottles of the blend will be sent back to members to be sent for judging on national level. Check this link for more details and to join.

Bring your Oktoberfest Competition entries! This is the best time to drop off your beer. You must register your entries on the ASH online form.

 

We are discussing pairing cheese and homebrew. We need volunteers to bring extra homebrew to share with the group for the pairings. We'd especially appreciate anyone who can bring a barleywine, fruit ale or funky farmhouse ale. 

 

Bring homebrew to share. If this is your first meeting, you're still welcome to bring your beer. We have a reach in cooler in the back of the clubhouse where the homebrew goes. Make yourself at home and place your beer on the shelf and help yourself to other members' beer. If you don't have your own tasting cup, we have glassware and plastic cups next to the cooler.
