We have another exciting year ahead with more food possibilities than ever.
Semolina Kitchen & Bar is now open for full service lunch & dinner, offering Mediterranean fare, pizza, pasta & small plates... along with coffee and pastries in the morning.

The full bar offers plenty of classic cocktails, 6 draft beers, and great wines by the glass that can also be found for bottle purchase at DFP!

Our pizza oven is fired up, and the kegs are full. We look forward to serving you our new menu Monday through Saturdays. Check out the website for info on kitchen hours, parking, and reservations :)

10/5  Spanish Tapas Night
with Dennis Quinn of Genuine Wine Selections
Join us and Mr. Dennis Quinn for and evening exploring the rich, inseparable culture of Spanish food and wine. Sample small plates (Tapas) of wine-friendly fare such as Manchego cheese, briny olives and cured ham. Genuine Wine Selections specializes in old-school, traditional wines from all over Spain, from the iconic reds of Rioja in the north, to funky and ancient wine grape varieties grown in the Spanish territory of the Canary Islands.

10/19  Tour of Italy Night
with Martin Langer of OZ Wine Company
Back in April, Sam travelled to Verona, Italy with Martin, where they (officially) tasted through hundreds of Italian wines at Vinitaly, the world's largest wine expo. Come sample Italian-inspired food pairings from the DFP kitchen while sipping some tasty new imports.  A few of these great wines, only now making their debut in Massachusetts, will be featured in this whirlwind tour of Italy.

11/16  Pacific Northwest Night
with Jenna Harlow of MS Walker
Home to some of the most versatile f3ood wines on the planet, the great Pacific Northwest of the United States is perhaps best known for the world-class Pinot Noir wines from the Willamette Valley, in Oregon. It's also home to crisp, refreshing, aromatic whites and Bordeaux-style blends from Washington state. Indulge in three varied courses of Pacific Northwest cuisine and let Jenna's wealth of wine knowledge inspire you to choose wines for your Thanksgiving table.

12/7  Piemonte Night
with Liz Stern of Vineyard Road
Vineyard Road is a Massachusetts-based importing company that focuses on small producers of traditional wines, from grapes farmed naturally and made with minimal intervention. Piemonte is arguably the best food/wine region in all of Italy, home to meaty, braised ragout dishes, many local cheeses, mushrooms and the versatile, food-friendly wines made from Barbera and Nebbiolo grapes. Not to mention, Piemontese sparkling and whites will also be represented.

9/28  Meet Your Importer Night
with David Mitchell of Mise Wines  
David is a passionate, extremely knowledgeable importer and distributor of wines from France, Italy and Portugal.  As the owner of Mise, he focuses his efforts on seeking out producers of "real wine made from properly grown grapes". Natural farming, indigenous yeast fermentation, and hand-picked grapes are hallmarks of such real wines, made by real people; Mise provides a conduit between small, traditional producers and wine lovers here in Massachusetts.

11/2  Meet Your Winemaker Night
with Marco Montez of Penada Wines
Hailing from Tras-O-Montes, in northern Portugal, Marco Montez took over his family's winery and began cultivating only indigenous grape varieties in naturally farmed, higher elevation vineyard sites in 2011. The Penada wines are un-oaked, fresh and lively expressions of the mountainous terroir. Marco will be available to answer any of your winemaking questions, while pouring samples of his latest vintages.

Are you wondering what is up with our cooking classes for the Fall? Good question! 
Generally the fall class schedule would be out in early August. This year will be different. We are opening a new restaurant, called  Semolina Kitchen & Bar , on Boston Ave. in Medford.
Chef Jason is hard at work at the new place! 
This will delay the start of the classes, but keep tuned to the website or  sign up for our newsletter  for first notice of when the classes return.

Salty proscuitto and peppery arugula are a perfect pairing! Try this ravioli with any one of our rich cream sauces - alfredo or gorgonzola would be delish... Arugula-Toasted Almond Pesto is also a nice match.

One of our favorites! This versatile pesto is earthy and savory, it goes well with just about anything, but is especially great with our ravioli and pasta of the month...what doesn't need more fresh parsley? 

Crushed Red Pepper Pasta     $4.75/lb   reg $4.99
Spicy AND beautiful...it looks like Christmas, but packs a serious punch! Use it for spicy shrimp scampi, or with some roasted chicken and our Alfredo sauce for a spicy, creamy winter meal. Linguine, fettucine, spaghetti, angel hair, pappardelle, lasagna sheets ~ however you choose, we'll cut it to order.
Colston Basset Stilton
Colston Bassett  is one of the smallest dairies in the United Kingdom, they make their pasteurized cow's milk Stilton the traditional way using hand-ladled curd and animal rennet, not to be found at any other Stilton maker. The texture of this Stilton is more luscious, creamy and full-bodied, and the flavor is more complex than any other Stilton produced with vegetable rennet. It has a incredibly creamy texture with a pale, ivory paste with a even distribution of blue colored veins. The wrinkly rind is slightly sticky, orange-brown in color, and speckled with patches of white mold. Colston Bassett Stilton is earthy and lactic, balanced by the richness of blue mold and butter. Serve with a nice tawny port or fresh pears!

Keen's Cheddar
...Because you never outgrow a good cheddar. The Moorhayes Farm family have been making cheese in Somerset, England since the late 1800's, and the same recipe is used today. Their three-day pressing process makes for an extra dense wheel that they wrap and age for a minimum of one year! The result is a hard, pale yellow paste that has a creamy mouthfeel, nutty aroma, and an earthy, smooth flavor with a little punch of acidic tanginess. Make a fancy grilled cheese with it with a strong ale, or embrace autumn with apples, cinnamon walnuts and a fruit-forward red.

Wyfe of Bath
From the Bath Soft Cheese Company in Kelston comes this succulent, nutty and creamy English cheese made from a recipe inspired by Dutch goudas. Wyfe of Bath takes its name from Chaucer's Canterbury Tales and, like the tale, when you cut into a Wyfe of Bath you will get a taste old England. This cheese is organic and made with vegetarian rennet. It is made by placing the curd into cloth lined baskets, the cheese retains the basket shape and has a soft light caramel color, with flavors of butter and grass. As a hand-made, single-herd cheese, its taste changes slightly according to the season, but it is always sweet, rich and tastes of buttercups.

La Quercia Speck Amerciano

This speck is smoked at the end of its natural dry curing (only pork and sea salt, no other ingredients). Thus the smoke finish is light and inviting and does not interfere with the sweetness of the meat. No flavorings or spices are used to interfere with the subtle, delicate flavors of just aged meat, sea salt, and apple wood smoke. As always, La Quercia 's products are made with humanely raised antibiotic free pork.

Fra' Mani Rosemary Ham   

Fra' Mani's Rosemary Ham is made from the three attached major muscles of the pork leg. It is hand-trimmed, with a thin layer of flavorful cover fat & seasoned with rosemary. The pork comes from family farmers committed to the well-being of their animals and their land. The hogs are never given antibiotics, artificial growth hormones, growth-promoting agents or meat by-products. This
ham makes a great sandwich, or chop it up and add it to a quiche or on top of a pizza!

Abbae de Queiles
Extra Virgin Olive Oil

Hacienda Queiles'  Abbae de Queiles  organic extra virgin olive oil comes from a small estate in the Queiles valley in Navarre in the north east of Spain. The olive trees are at the foot of the Moncayo Mountains where they have been growing since the ninth century. This oil comes from the Arbequina olive trees, one of the best varieties of olives for oil in the world --  Abbae de Queiles  has an exceptionally low acidity of 1%. This oil is extracted from organic arbequina olives, with no additives or preservatives.
In only a few hours the olives are picked, selected and washed. They are then pressed immediately and the oil is stored in stainless steel containers until it is bottled on the premises. This rapid process ensures that the oil has a low acidity and fully maintains its' aroma, flavor and nutritional properties.
Abbae de Queiles  is pressed without any chemical treatment, nor is it heated during the process, a procedure which increases the yield but considerably reduces the quality of the product. This is a low acidity aromatic olive oil, perfect for drizzling, dipping and garnishing. It has a delicate, slightly sweet and fruity taste with a hint of fresh herbs, ideal for dressing all types of salads, and for grilled or steamed white meat and fish.

Pinot Noir from Languedoc, France
Bright aromas of crushed berries, soft spices and a subtle touch of vanilla. Medium-bodied strawberry and cherry on the palate that give way to ripe acidity and soft tannins. Cool mediterranean climate and stainless steel fermentation lead to an elegant wine with a pleasant earthy finish. Pair it up with a fresh salmon on the grill.

Viognier from Barossa Valley, Australia   
Full-bodied with enticing aromas of fresh honeysuckle and flavors of apricot and peach on the palate. Lip-smacking, clean finish with bright acidity, maintained by stainless steel fermentation. From Australia's oldest family-run winery, established in 1849.

Now this is the quintessential fall sipper to carry us in to the warm days and cool nights yet to come. Light, fresh and crisp on the palate, the Vall é e des Pins is delightfully typical for a Provençal rosé. Bright red fruits and zesty acidity; light and easy drinking.

Loureiro, Azal and Arinto from Minho, Portugal
This is not your typical Vinho Verde. The folks at ViniBio produce biodynamically and ferment Mica at a very cool temperature, producing a vibrant, structured white. Intense citrus and green apple aromas fill the glass and uplifting wet stone minerality washes across the palate. Great way to start off any meal or compliment fresh shellfish.

Grenache from the R h ô ne Valley, France
La Manarine is the rare southern Rhône wine that is not a blend. It is both fruit forward but well-balanced, bringing ripe red fruit flavors and earthy undertones. The wines full-body, shows excellent depth and a surprisingly vibrant mineral finish.
