Raw Key Lime Pie

This recipe is fun to make, incredibly delicious, and healthy too!  It's an absolute joy to eat!  For the best results use organic ingredients whenever possible.  Also, it is best to make this dessert the day before you want to serve it.  It takes about a day to fully set so that the pie stays together in pretty slices.
Keep in mind that this recipe takes a bit more preparation and time than other pies that you may be used to making.  But, it is well worth the effort!

 Try this recipe and see if you agree with me that there is nothing else I would rather make or eat to fulfill my sweet tooth.

Make one 9 inch Pie

For the Crust

1 1/4 cups macadamia nuts

1 1/4 cups pecans

Scant 1/4 cup well packed, finely chopped dates (medjool are the best)

1/4 teaspoon vanilla

1/8 teaspoon salt

In the bowl of your food processor fitted with the "S" blade, process pecans, macadamia nuts, vanilla and salt until crumbly.  Continue processing while adding small amounts of chopped dates until crust sticks together.  Press crust into greased (with raw unscented coconut butter) 9 inch pie pan.


For the Filling

3/4 cup lime juice

7 1/2 ounces avocado

1/2 cup + 1 tablespoon agave nectar

1/4 cup + 2 tablespoons coconut milk ( Freshly made - see below)

1/2 teaspoon vanilla

1/8 teaspoon salt

2 tablespoons lecithin 

1/2 cup + 1 tablespoon raw unscented coconut butter

Blend all ingredients except the lecithin and coconut better until smooth (this is best done in a vita mix, though a food processor or blender should work well).  Add lecithin and coconut butter, blending until well mixed together.  Pour into prepared crust and set in the fridge/freezer until firm.  The meringue can be added after about an hour.

Topping ~ Live Meringue 

3/4 ounce Irish Moss seaweed (soaked in water for 8 hours)

1/2 cup water 

1 cup coconut milk (see below)

1/2 cup coconut meat (this is the meat that is inside of the young raw coconut)

1/2 cup soaked cashews

1/4 cup + 1 tablespoon agave nectar

1 teaspoon lemon juice

1 teaspoon vanilla

Pinch of Salt
1 1/2 teaspoons lecithin

1/2 cup coconut butter

Blend the soaked Irish moss and water until smooth and thick. Make sure to rinse the Irish moss first, then soak for 8 to 24 hours and then rinse again before using).   Add coconut milk, coconut meat, cashews, agave, lemon juice, vanilla and salt.  Blend until smooth.  Add lecithin and coconut butter until well blended together.  Pour into a wide, shallow pan and set in fridge for up to 3 hours.  When set or firm, you can add this to the top of the key lime pie as thick as you would like.
Let the pie continue to set in the fridge for up to 24 hours before serving.  The longer it sets, the firmed the pie will be, making it much easier to slice and serve. 

How to make your own Raw Coconut Milk

You will need young, live coconuts for this which can be purchased at most health food stores.  Most commonly they come from Thailand.  
First, you will crack up the coconut  using a large, sharp cleaver or heavy chef's knife.  Click Here to see how to open a coconut properly.
Once you have the coconut open, you will want to pour the liquid out into a measuring cup.  Next, you will scrape all the meat out of the inside with a heavy spoon.  Make sure to remove all hard pieces of the shell, etc. Now, you will blend the liquid and the meat together in a vita mix or blender until smooth and well incorporated.  This is fresh, raw coconut milk!

We are grateful to have the most beautiful wool source we could dream of...

...Our Premium Eco Wool, provided by the Woolgatherer Carding Mill in Montague, CA, comes from sheep who graze upon the beautiful, green pastures of Oregon, California, Washington and Montana.  This wool blend is a combination of about 7 different types of wool including Corridale, Cheviot, Columbia and Dorset. 

Our growers are currently completing their shearing season for the year.  This is when all of the thousands of sheep are given hair cuts!  This process is kind and cruelty free,  This is definitely one of the busiest times of the year for our growers aside from lambing season. 

 
Usually, our growers will hire professional shearers many of whom come from New Zealand to complete this time consuming project.  
 
Our growers choose the perfect time of the year to shear depending upon the  obnoxious weeds that grow in their pastures.  It is important to shear the sheep before the prickly weeds dry up and are more likely to get stuck in the fleeces.  On the Oregon coast (where the majority of our wool comes from), the middle of July is the perfect time to shear.  This timing is a large part of what contributes to the cleanliness of our Premium Eco Wool. In addition, right after shearing, the wool is placed on skirting tables at which point all the dirty areas of the fleece are removed from the rest of the wool. 
We are excited this year to hear that the Woolgatherer Carding Mill is purchasing the Roseburg wool pool, which has a reputation of being the nicest batch of wool in the Country! This is great news for us and for you.

 


Once the Woolgatherer Carding Mill gathers all
 180,000 pounds of grease wool
 (wool fleece before washed), they send it all off to Texas, where the wool is washed in a large scouring plant.  This is the only large scale wool washing facility left in the country and they do an excellent job at cleaning the wool well while fulfilling our requirements of using an all natural, organic detergent.  Basically, the wool gets stirred through 6 different bowls of 180 degree water until it comes out nice and clean.  This year, our Premium Eco Wool blend is going to be double scoured which will create an even cleaner, scent-free wool!  This will naturally result in an even cleaner, healthier bedding product.
 
After being washed, the compressed bales of  wool are shipped back to the Woolgatherer Carding Mill, in Montague, where the wool is run through a unique series of machines that comb and fluff the wool and remove much of the remaining vegetable matter.  First the compressed wool is run through a "picker" machine which pulls the compressed wool apart and blows it through a chamber in order to re-fluff the wool.  After "picking," the wool moves through 3 complex drum carders that comb the wool repeatedly.  The carders loosen and comb out plant matter as well as short and weak fibers.  The de-tangled wool is eventually brushed into thin sheets with all fibers aligned in one direction.  Finally, the "lapper" layers the thin sheets of wool until they reach the desired thickness and width of the perfect batting.

  Storing and Moving Your Wool Bedding         
 

How to store your bedding safely during the Summer months

 

Many of our customers call and ask how to store their wool bedding during the summer months or how to travel with it. This is a good question and one that is important in order to keep your wool bedding in good condition for decades.

 

Wool Bedding ~ Most of our wool bedding can be stored either in a cedar chest or closet, or sealed in plastic.  The most important thing when it comes to successfully storing your wool bedding is to be sure that the product is clean and well protected from moths.  When your bedding is being used regularly, moths are not an issue, but when stored in the dark, it is important for the packaging to be fully sealed so moths can't get to the wool.  Cedar naturally repels moths, as well as essential oils and herbs such as Lavender, Patchouli, Oregano and Palo Santo.  If you do happen to have an issue with moths in your home, here is some advice on naturally getting rid of moths, click here .  Place your bedding in a breathable bag to protect it while traveling.

Wool Mattresses ~  Ideally, our wool mattress would be cleaned and sanitized then stored flat, wrapped with a breathable covering and out of direct light.  For long-term storage you can protect your mattress by storing it in a plastic mattress bag . You can also pick up mattress bags at most U Haul locations.  If you do not have space to store your mattress flat, we would suggest rolling the mattress up loosely and tie it with the ties that came with your mattress.  You can then use large garbage bags to protect the mattress.  For any size larger than a Single/Twin, you will need 2 bags, one on each end.  We recommend to double bag your mattress for additional protection.  It is best to then seal the bags with packaging tape so that it will be protected from moths and other pests.  You can order biodegradable garbage bags on Amazon, click here.  Remember to get a friend to help you carry it. 

 

With proper care, your wool bedding can last for several decades.

[My cat] Rosebud loves all Shepherd's Dream products but her favorite is the wool batting. She has to be supervised when playing or she will eat it!!
