Sneak Preview

The creative work on our upcoming cookbook with Skyhorse Publishing reached another milestone: we completed the recipes and captured them.

What a magnificent 4-day photo shoot we had. An incredible team of savvy and dedicated professionals, plus world famous food and produce suppliers (our sponsors) came together in an absolutely beautiful and equipped kitchen for 4 days of continuous prepping, cooking, and shooting. The result? BUTTERNUT SQUASH

This recipe is gluten-free, sugar-free, dairy-free, and diabetic friendly. All ingredients are from Melissa's Produce.

Serves: 4
Prep: 5 minutes
Cook: 20 minutes

Ingredients:
- 2 tbsp Olive oil
- 2 packages of Melissa’s Peeled and Steamed Butternut Squash
- 1/2 package Melissa’s Peeled and Steamed Garbanzo Beans
- 1 large onion, chopped
- 5-10 fresh thyme sprigs
- 1/2 tsp salt and 1/2 tsp pepper
- 3/4 tsp ground cumin
- 1/2 tsp ground turmeric
- 4 cups vegetable stock

Method:
1. In a large sauce pan add olive oil, chopped onions and thyme and cook until browned. About 5 min.
2. Add butternut squash, garbanzo beans, stock and remaining ingredients and cook for 10-15 min.
3. Once the vegetables are soft, remove thyme sprigs and de- leaf the sprigs, pour into high speed blender and blend 2-3
minutes until desired consistency. I like mine a bit chunky so I blend for less time.
4. Serve in bowl and top with pumpkin seeds and fresh thyme.
