charles de cazanove brut rosé, reims, france  n.v.
candied raspberry and strawberry fruit notes and rose petal aromas
dry and elegant with a rich mouthfeel

 

piccante salami, pickled radishes
capriole farms goat cheese
frisee, solera sherry vinaigrette        

 

matua sauvignon blanc, marlborough, new zealand  2010   

tropical and citrus fruits and attractive herbaceous characters on the nos
palate is generous and fruit driven with bright acidity
giving a fresh, clean palate with a light passion fruit finish


chesapeake bay soft shell crabs, cece beans
piquillo pepper puree, pea tendrils

 

mckinley springs cabernet sauvignon, horse heaven hills, washington  2009   

notes of concentrated red and black fruit
cinnamon spice and dry earthy tone
palate is supple, with deep blueberry, plum and spice flavors
soft dusty tannins round out the finish


beef tenderloin, roasted corn
caramelized spring onions
