A Message From your Southeast Region Vice President
The Sweet Heat of the Southeast has a much welcomed Fall chill in the air! I am thankful for the opportunity to be here to witness these seasonal changes with my family, friends and colleagues.

The Holidays are upon us, are you ready? How did you survive the massive Thanksgiving Day feast? What are your “Best Practices” for holiday production? Please share with me on Facebook, LinkedIn, Twitter to help us learn and grow together.

I started cutting our 10” round cakes into 18 slices (was 14) and our pies into 12 slices ( was 10). After seeing too many half-eaten pieces from the dessert buffet table and on plates going to the dish pit, I determined smaller was better as most people just want to try it all, but their waistline couldn’t support that decision!

The ACF Board of Directors had its second meeting in my hometown of Chicago! It snowed the first day, but we were undaunted by the freeze and got down to business to find ways to be better stewards of the purse strings and still have valuable member services. Locking down conferences and conventions for the next few years to save money and help plan better events is a part of the plan. This week, ACF's 2017 Salary Survey will also be available in the member's portal.

I am really excited about a few of the cities we are looking at! Stay tuned for those announcements. Thank you to the ACF Chicago Chapter for being so gracious and hospitable to the board. Bravo to Elizabeth Bergin for her AAC honor!

Thank you to the members who took the time to get on our new monthly calls. It is one of the ways I am trying to reach members and get them the most up-to-date information on events, happenings and concerns. The calls are on the last Wednesday of each month starting again after the holidays. The next call will be Jan. 31.

Topics discussed range from the ChefConnect: Charlotte conference in February to growing membership at the chapter level. That topic never gets old! Shout out to the Charlotte chapter for growing their membership in the midst of hosting our dual regional conference. 18 new members in one month is phenomenal! Kudos to our colleagues in Mobile, Alabama, for hosting more than 700 children for their Chef and Child event! We all look forward to sharing on the next call.

Southeast Region Culinary Salon Competitors
The Southeast Region culinary salons are Feb.23-25 at Central Piedmont Community College in Charlotte, North Carolina. The best chefs in the Southeast will compete to represent the Southeast Region and earn the national title at Cook. Craft. Create. ACF National Convention & Show in New Orleans, July 15-19. The public is invited to attend and cheer on the chefs!

The Knowledge Bowl is a battle of culinary wits! Face off against student teams to prove your chapter/school is the best in the nation! The deadline is extended to Dec. 15.

ACF Culinary Youth Team USA
ACF Culinary Teams are the official representative of the U.S. in international culinary competitions. The deadline for youth team applications is extended to Jan. 1, 2018.
Presidential Awards
The deadline to nominate a colleague or restaurant for a presidential award is Dec. 31. These awards represent the highest honors ACF can bestow.
