April - May 2012

Dear Friends of Beyond Boobs!

We hope all of you are enjoying this beautiful season of Spring as it blooms fragrantly and flamboyantly around us on its jaunty path toward Summer.  The  Beyond Boobs! office has been abuzz with activity, and we wish to thank everyone who helped make our recent fifth Annual "Breast Ball" tournament in Williamsburg and our Starlets on Stage Fashion Show in Norfolk so successful.

What's in store at Beyond Boobs! this summer?  Well, thanks to G3 Systems and our fabulous summer intern from Christopher Newport University, Ashley French,www.beyondboobs.org  will be getting a makeover.  The result will be a new and improved website to help us further our mission of support and education.  We are also in the process of writing and designing A Calendar to Live By 2013 with a new theme of "Each of Us Is a Masterpiece."  In addition to the compelling and heartfelt stories of 11 of our "Boobers!", the calendar will contain great tips and information to help each one of us take care of our own masterpiece and live a healthy and inspired life.  (Please consider being a part of this always special project by being a sponsor or by purchasing calendars by clicking here.)

Below you will find the stories of two of our 2012 calendar girls, Ms. April and Ms. May, Shae and Sara.  They both found Beyond Boobs! after being diagnosed with breast cancer, and they allowed us the privilege of becoming a part of their lives and holding their hands as they traveled a very scary and unexpected path.  Sara, is now a regular volunteer at the Beyond Boobs! office, and offers this perspective, "Throughout my cancer battle my friends and family all wanted to be my mom;  Beyond Boobs! only wanted to be my friend. They are the best friend a girl could have."

We don't want to be every girl's best friend.  (That's what diamonds are for!)  But we definitely want to be there for any young woman who finds herself unexpectedly needing a friend who "has been there, done that."  Our unique "support systems" provide the vehicle for these women to come together and love each other through it and beyond.  There are a variety of organizations focused on research, or screening, or education, but we provide the services that are needed by the women with breast cancer NOW - love and hope.  And by helping them, we are also helping their families, and ultimately our communities.

See you next month, and thanks for helping us be a " best friend" to all of the youngwomen who need us.

April Calendar Model Shae Jarrett

32, diagnosed    at 29  No Family History

Homemaker, wife, and mother of a young daughter, Shae discovered a lump in her armpit that she thought was a swollen lymph node from bronchitis.  Her doctor sent her for a mammogram and ultrasound, followed by a biopsy that confirmed invasive ductal carcinoma.  Shocked, Shae felt lost and helpless until her family jumped in to "take on" breast cancer with her.  She especially credits her husband for sharing his strength to help her overcome this life-altering challenge.  Her treatment consisted of chemotherapy, a bilateral mastectomy, and radiation, and she is now on hormonal therapy to reduce recurrence risk.  Cancer free and with a newfound appreciation for life, Shae takes nothing for granted and frequently reminds herself, "Life is short, so embrace every moment."  She knows because of the love of her "prince charming" husband that fairy tales really do come true.

May Calendar Model   Sara Lee

27, diagnosed at 25, Immediate Family

 History, No Genetic Mutation

United States Army Soldier, wife, and mother of two young sons, Sara was just 24 when her husband found a lump in her breast. She immediately went to a doctor who dismissed it as a cyst. Still concerned, she returned three additional times over the course of a year, but it wasn't until her nipple was bleeding and inverted that she was referred for diagnostic testing, which revealed invasive breast cancer and Paget's disease.  Her treatment consisted of a bilateral mastectomy, chemotherapy, radiation, ovary removal, and she is now on hormonal therapy to reduce risk recurrence.  Cancer free, she loves the person she has become since her breast cancer journey.  Sara learned to value life and live it the best way she knows how - loving her family well, laughing and living loudly, and being happy that she has today.

It's Time to Fix Our Broken Cosmetics Laws

California's Department of Toxic Substances has revealed that a variety of nail polishes contain high levels of hazardous chemicals despite product labels claiming otherwise. These chemicals, dibutyl phthalate and toluene, have been linked to birth defects, asthma and other chronic health conditions.

Labels shouldn't lie and whether you're a nail salon worker or taking your daughter out for a mani-pedi, you should be able to trust that the products you're using are safe.

Grilled Smoky Eggplant Salad

From EatingWell: July/August 2007

 Ingredients

  • 2 small eggplants, (about 1 pound total)
  • 3/4 teaspoon kosher salt, divided
  • Olive oil cooking spray
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon sherry vinegar
  • 1 small plum tomato, diced
  • 1 small clove garlic, chopped
  • 1 1/2 teaspoons smoked paprika, (see Note)
  • 3 cups mixed baby salad greens
  • 2 ounces Manchego cheese, cut into thin curls with a vegetable peeler (see Note)

Preparation

  1. Preheat grill to medium.
  2. Cut stripes in each eggplant's peel by running a vegetable peeler down the length of it and repeating at about 1-inch intervals. Slice the eggplants into rounds 1/3 to 1/2 inch thick. Lay them on a baking sheet and sprinkle lightly with 1/2 teaspoon salt. Let stand for about 5 minutes.
  3. Blot the eggplant slices with paper towels and lightly coat both sides with olive oil cooking spray. Grill the eggplant, flipping halfway through, until soft and browned on both sides, 9 to 11 minutes total.
  4. Puree oil, vinegar, tomato, garlic, paprika and the remaining 1/4 teaspoon salt in a blender until well combined.
  5. Toss salad greens with half the vinaigrette in a medium bowl. Arrange the eggplant slices on 6 salad plates. Drizzle with the remaining vinaigrette. Place the salad greens over and between the eggplant slices, then scatter the cheese curls on top of each salad. Serve warm or at room temperature.
