Take a Walk!

  

  

Most of us have heard by now that exercise, including walking, generally improves thinking skills, both immediately and in the longer term.  Well, according to a new study, a brief stroll, even one just around your office, can also spur creativity!  Next time you hit a "block", try taking a step away from your desk... and then take a few more steps after that... before you know it, your creative juices will be flowing!
 
 
Sleep Like a Baby!

  

 

  

May is National Sleep Better Month!  As we get older, some of us have a hard time getting to sleep... There are lots of reasons this may be the case, and if it's truly a problem for you, please come and talk to me about it, as real sleep issues can negatively impact your life in a variety of ways!
 
Try some of these relaxing bedtime rituals before bed to get yourself in the mood... to sleep!
 
Read a book or magazine by a soft light
Take a warm bath
Listen to soft music
Do some easy stretches
Wind down with a favorite hobby
Listen to books on tape
Make simple preparations for the next day


Steak with Cumin-Lime Yogurt and 
Cauliflower Salad

If you have a busy day, you don't want to spend hours preparing dinner... After all, how can work on your "sleep better" nighttime routine if you have too much to do at night?!  
 
This recipe we found on www.realsimple.com is delicious and healthy, and best of all, it shouldn't take you more than a half-hour from beginning to end... To make it even better, the cauliflower salad gets better if let to soften, so go ahead and make it up to 2 days ahead of time and keep it in the fridge so you're ready to go!
 
INGREDIENTS (4 Servings):
  • 1/2 cup plain low-fat Greek yogurt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon finely grated lime zest plus 2 tablespoons lime juice
  • salt & pepper
  • 1 small head cauliflower (approx. 1 1/2 pounds), trimmed and halved lengthwise
  • 2 scallions, thinly sliced
  • 1/4 cup pecorino, grated 
  • 1/4 cup EVOO (3 tbsp. for cauliflower, the rest for steak)
  • 1 1/4 pounds skirt steak, cut into 4 pieces

 

CAULIFLOWER SALAD:

 

Thinly slice the cauliflower, starting with the crown and working down to the stem end.

 

Toss together the cauliflower, scallions, pecorino, lime juice, 3 tablespoons of the EVOO, and approximately 1/4 teaspoon each of the salt & pepper in a medium bowl.

 

That's all there is to the salad!  Either set it aside (for at least 15 minutes to soften up a little bit) or put in the fridge for up to 2 days.

 

STEAK WITH CUMIN-LIME YOGURT:

  

Whisk together the yogurt, cumin, lime zest, and approximately 1/4 teaspoon each of the salt & pepper in a small bowl, and set aside.

 

Heat the rest of the EVOO in a large skillet over medium-high heat (about a tablespoon should be leftover from the cauliflower salad).  Season the steak with 1/2 teaspoon of salt and 1/4 teaspoon of pepper.

 

Cook for 3 to 4 minutes per side for medium-rare.  Let rest for 5 minutes before slicing against the grain.

 

Serve the steak with the cauliflower salad and cumin-lime yogurt.
