QUICK LINKS

Ingredients

* 1 tablespoon olive oil
*1/2 pound sweet Italian sausage links, casings removed
*2 small zucchini (about 1 pound), sliced
*kosher salt and black pepper
*1 sheet puff pastry (half a 17.3-ounce package), thawed
*3
tablespoons Dijon mustard
*green salad, for serving

Directions
1. Heat oven to 400° F. Heat the oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until cooked partway through, 3 to 4 minutes. Transfer to a plate using a slotted spoon; reserve the skillet.

2. Add the zucchini, 2 tablespoons water, ½ teaspoon salt, and ¼ teaspoon pepper to the drippings in the skillet. Cook, stirring occasionally, until just beginning to soften, 4 to 5 minutes.

3. Unfold the pastry on a baking sheet and prick all over with a fork, leaving a ½-inch border around the dough. Spread the mustard on the pastry (avoiding the border); top with the zucchini and sausage. Bake until the pastry is golden brown, 20 to 25 minutes.

4. Cut the tart into 8 pieces. Serve with salad.

Memorial Day  - May 30

Memorial Day, originally called Decoration Day, is a day of remembrance for those who have died in service of the United States of America.

Memorial Day was born out of the Civil War and a desire to honor our dead. It was officially proclaimed on 5 May 1868 by General John Logan, national commander of the Grand Army of the Republic, in his General Order No. 11. "The 30th of May, 1868, is designated for the purpose of strewing with flowers, or otherwise decorating the graves of comrades who died in defense of their country during the late rebellion, and whose bodies now lie in almost every city, village and hamlet churchyard in the land," he proclaimed. The date of Decoration Day, as he called it, was chosen because it wasn't the anniversary of any particular battle.

Red Poppies:
In 1915, inspired by the poem "In Flanders Fields," Moina Michael replied with her own poem:
She then conceived of an idea to wear red poppies on Memorial day in honor of those who died serving the nation during war. She was the first to wear one, and sold poppies to her friends and co-workers with the money going to benefit servicemen in need.
