Pick of the Week Recipe: Asparagus Soup

Nothing like fresh local asparagus, the harbinger of spring! It’s so sweet and what’s in season!   (serves 4)

Ingredients:

2 Bunches, about 2 lbs of fresh local asparagus
- ½ cup of diced onion
- 1/8 cup Grapeseed or mild olive oil
- 1 small sprig fresh tarragon(optional)

Directions:

Chop remaining asparagus keeping tips whole at about 1”.  Using a 2 quart pot, sauté the onions with the asparagus in the oil a few minutes until the asparagus is bright green and onions are translucent. Remove 12 of the asparagus tips and set aside.

Pour the broth over the sauteed vegetables and simmer until asparagus is tender and still bright… 5-10 minutes.

Using an immersion blender or a blender (careful to open the top a bit with a blender letting the steam escape to prevent scalding yourself!), Blend until smooth and creamy. If too thick, add a little water. Salt and pepper to taste.

Serve in bowls and garnish with three asparagus tips. Enjoy!
