Saint Lucia Get Ready to host almost century of ARC crossings


As the clock ticks ever closer to the first set of vessels in the 2014 trans-oceanic sailing event crossing the finishing line here, more corporate entities have thrown their support and brand recognition behind Saint Lucia's efforts at hosting the internationally recognized Atlantic Rally for Cruisers (ARC).


 
This year for the 24th consecutive time Saint Lucia will serve as the finish point for the close to 250 vessels expected to end the over 2700 nautical mile journey at the IGY Rodney Bay Marina.

1st National Bank secures two ECCB awards 


1st National Bank St. Lucia Limited has been recognised regionally for its continued commitment to national development and in particular in the areas of Financial Education and Empowerment and Sports.


The Good Corporate Citizen Award for Sports was presented to 1st National for its 21 years unbroken partnership with the St. Lucia Athletics Association for the 14 and under track and field championship. Most of St. Lucia's top athletes have been through that programme.

Chef Elijah Jules to conduct two-day workshop in Barbados


 
Executive Sous Chef Elijah Jules of Jade Mountain left for Barbados yesterday, at the request of the organizers of the Roberts' NIFCA Culinary Arena Expo in association with Caribbean Cuisine and Massey Stores.

Outstanding Employee Feature: 

Allan Jn Baptiste (Pastry Chef of Cap Maison)

 

It is a great pleasure to feature this week's outstanding employee from Cap Maison. This week we feature a young man who has grown tremendously from the ground up (Literally from the ground).


 
Allan Jn Baptiste started his career during the year 1999 in the Grounds Department as a Gardener with 'The Bodyholiday LeSPORT', for approximate three (3) months. Then, he acquired an opportunity to work as a Store Keeper. There he would be responsible for delivering supplies and ingredients to the kitchen. Little did he know that his fate would change upon interacting and building a close relationship with the Pastry Chef at the time.  Allan was asked whether he would be interested in becoming a Chef, which he said yes.


 
Determined to better himself and grow as a young professional, Allan would stay back until 11pm everyday to train in the kitchen after his 9am-5pm/7am-3pm shift. Allan learned and trained hard for approximately 4 months and within 1 year he made a full transition into the kitchen as a Pastry Chef (Chef Allan Jn Baptiste).


 
Within that same year Chef Allan participated in the SLHTA's Annou Tjuit Sent Lisi (Lets Cook St Lucia) competition winning the 2nd place prize.

 

After 6 years at LeSPORT, Chef Allan moved on to Discovery at Marigot Bay (Now Capella) as an Assistant Pastry Chef. During his stint at Discovery, he got an opportunity to cater for the 2008 entertainers of the Saint Lucia Jazz Festival. Wyclef Jean who was one of the artists in the 2008 Jazz Festival called Chef Allan on stage and said that his Cheesecake was the BEST he has ever had and then they exchanged Jackets.

 

It was at that moment someone from the crowd spotted Chef Allan, and within a few days he received a call from General Manager Ross Stevenson, followed by a call from Executive Chef Craig Jones.

 

Six (6) year later, Allan is still the Pastry Chef at Cap Maison. Chef Allan has participated in several of the SLHTA Competitions, visiting secondary schools in the Chefs in Schools Programme to pass on his knowledge to the younger generation. Allan has also received the opportunity to travel to Barbados and Bermuda to master his skills and learn the art of using chocolate in pastries.

 

Allan Jn Baptiste is a graduate of the Bocage Secondary School.

Energy Saving Guide


 

Lighting

  • Install occupancy and daylight sensors so that your lights are only on when required.
  • Use low-energy lighting. Replace tungsten GLS lamps and T12 fluorescent tubes with much more energy efficient items such as T5 tubes or compact fluorescent or LED lamps. These could help you reduce the electricity you consume for lighting by up to 80%. Furthermore, some of the newer bulb types last more than eight times longer than tungsten GLS lamps, and, as they produce less heat, they will put less strain on the cooling required from your air conditioning system.

Air conditioning

  • Avoid using air conditioning for cooling until the temperature exceeds 23-24�C.
  • Implement a building management system (BEMS). These systems control and monitor heating, ventilation and air conditioning, and can reduce total energy costs by 10% or more.

Refrigeration

  • Defrost fridges regularly; check the seals on cold rooms and fridges; and keep condensers and evaporators clean.
  • When replacing or buying new, look for energy efficient units such as those that are A rated. If possible, buy A++ units, as they have the lowest electrical running costs.
