Recipe for October! 
Serve on Thanksgiving Day!

Quinoa, Broccoli, Chicken, Zucchini dish!( how bout that for a name!)

 -1 cup organic quinoa
-2 cups chicken broth
-2 chicken breasts~cut into pieces
-1 lb zucchini
-2 cups broccoli florets
-1 small red onion sliced into rings
-1/4 cup olive oil
-1 tbsp. seasoning salt
-1/4 tsp. black pepper
-1/2 tsp. thyme
-1/4 cup parmesan cheese 

1)cook quinoa in 2 cups chicken broth
2) line greased casserole dish with cooked quinoa
3) combine all other ingredients (except parmesan cheese) in a bowl and spread across the quinoa 
4) bake @ 425F for 40 minutes
5) Add parmesan cheese and continue baking for 10 minutes

Serve and enjoy!  


  Serve with a crisp Sauvignon Blanc or Riesling!
Quinoa is a good source of protein, fiber, iron, copper, thiamin and vitamin B6.
