Enjoy a 3-course family-style meal featuring Cambodian dishes prepared with Waltham Fields' fresh produce (including our own farm-grown lemongrass)!

 

THE MENU:

 

Passed Hors d'Oeuvres from 6:30-7pm, and the bar is open.

Two cocktails have been created using our produce. Try the "Waltham Fields Reviver" using Milagro tequila infused with aji dulce peppers and a Mexican Sour Gherkin garnish, or "From the Ground Up" which is a modified Old Fashioned using Old Overholt Rye and husk cherry syrup.

 

First Course:

S'ngao Mouan - Chicken soup with chicken breast, lime juice and lemongrass garnished with Asian basil and scallion

 

Vegetarian Salade Cambodgienne - Shredded cabbage and carrot with red bell pepper, onion, crushed peanut, mint, Asian basil and vegetarian tuk trey sauce

 

Leah Chah - Maine blue mussels saut�ed with garlic, Asian basil, red bell pepper, jalepeno, and scallion

 

Second Course:

Vegetarian Somlah Kako - A fragrant braise redolent of lemongrass, galangal and kaffir lime with toasted rice powder, butternut squash, bok choy, snow peas, eggplant, and spinach

 

Organic Tofu Citronnelle - Organic tofu flash-fried and saut�ed in lemongrass sauce with onion, peas, red bell pepper, scallion, and crushed peanuts

 

Trey Battambang - Caramelized catfish filet served with a tangy and spicy jalepeno-pablano coulis, a giner-coconut sauce, and Cambodian quick pickles

 

Dessert:

Cambodian Dessert Trio (gluten free) - Three traditional desserts, including Sangkhia, a coconut milk custard, T'peh, sweet fermented black rice with fresh coconut, coconut cream and rum-soaked pineapple, and Pot K'tis, sweet corn with tapioca and coconut milk

 

Mousse au Chocolat Blanc et Noir (gluten free) - A rich and creamy chocolate truffle cake perfectly paired with raspberry sauce

The evening includes

a short speaking program with special guests

Yhara Casimir and Cristina Cook.

Yhara came to the US from Haiti in 2010 and is now a senior at Waltham High School.  After being in the ESL (English as a Second Language) Summer Program herself, she volunteered this summer interpreting for other Haitian students.  Cristina is a teacher with Waltham's ESL Summer Program, which has visited Waltham Fields for the past two summers, combining ESL program goals with the Farm's food and agriculture learning objectives. 

Yhara and Cristina will share their experiences participating in the Farm's education programs.
