Greetings!

It won't be long before I let the hem out of my shorts so I can hang around and be a nuisance to our staff wherever I land. Used to be I was slinging coolers and working our front line waiting on our customers. Now I don't work as quickly as I used to work and get in their way! We hope you make it a point to come out and see us to get your portion of seafood for this week.

The new facility for Summerfield is moving toward it's completion at 7403 Summerfield Road and will be ready for a November 10 opening at noon. Just so you know, the town of Summerfield has been most helpful in our endeavor.

We are located at Friday noon: 2301 Sandy Ridge Rd, (Fri,)Budding Artichoke and Saturday, 9 AM at 2913 Sandy Ridge Rd, (Sat.) Colfax, NC 27235 Cheerwine. (across from the Farmer's Market). In Mooresville, we're always at Josh's Farmer's Market, 189 Williamson Road, Mooresville, 1:00 PM on Fridays and 9 AM on Saturdays.

 Our salmon is cut from whole fish into huge fillets which are the sides of the fish without bones. We cut these sides into collars, center cut strips, wide cuts, and tails. 
Collars are the fattiest of all the cuts and are best for sushi mi and sushi. Tails are the least fatty and are best for medium, medium well, and well-done salmon. Strips and wide cuts are best for grilling, broiling and sauteing.
Please specify which cuts you prefer.

NOTE:
Our in-shell oysters were always sold in bushels, half-bushels, and pecks until we learned that some of the oyster men have different notions about how much volume constitutes a bushel so we started requiring our dealers to pack ours in 60# bushels, 30# half-bushels and 15# pecks. This offers us and you greater consistency in the bags we sell.

We can also offer to have your preordered oysters washed at the coast for a $5.00/Bushel fee, but we won't be washing them if you fail to preorder them washed. I also have to warn you that the life of a washed oyster is numbered in days and not the weeks that an unwashed muddy oyster will last under refrigeration. If your plans are to buy oysters to roast on the Thursday following your pick up from us the week before, you will experience several dried-out oysters because they have not had the benefits of the mud protecting them. Washing your oysters is your call, and you must weigh the benefits. Thanks.
