Lighting the Christmas Tree on the Island

Growing up I eagerly looked forward to spending a few days each summer at my grandmother's Bay View home. Sara Bailey Yoder, (the best baker in the world) always had a plate of warm cookies, a pitcher of cold milk, and a loving smile waiting for us. My brothers - Larry, Mark, and Eric - and I would come into the house from playing outdoors and be greeted by enticing aromas wafting from our grandmother's kitchen. Grandma would set the plate of cookies in front of us, and... well... it's one of my most cherished memories. I am fortunate to have had those idyllic days on Mackinac.    

 

That same unforgettable aroma lives on to welcome you, our guests, for your idyllic days on Mackinac. Our popular Cookie Concerto [available in the Best of Bay View Cook book] is prepared daily by Chef Rose (using Grandma Yoder's recipe), and offered afternoons at Mackinac Island's favorite B & B. My childhood enthusiasm for these cookies is not unique; our own Bay View Cookie Monsters consumed over 25,000 last season! The thought makes us smile.   

 

We are pleased and proud to have spent time with you this year, have you stay in our Bay View home, munch on the cookies, unwind and relax, and share your special occasions with us. Coffee Break - The Brew-ha on Coffee

Creating a connoisseur-worthy cup of coffee is almost an art form in itself. It requires consideration of several things, not simply which bag you buy. 

  

Bay View HeaderFor example...   

  1. Whole beans over ground. We always recommend grinding your Bay View Blend beans seconds before brewing. Whole beans maintain their flavor and aroma longer. Coffee grinders are available for less than $20 at stores like Target, and will typically last for years.  Use one teaspoon of freshly roasted beans per cup and adjust according to taste and strength.   
  2. The perfect brewing temp for coffee is between 195 and 205 degrees Fahrenheit. If the water is too cool, the brew will be under-extracted and yield a very flat taste. Many drip coffee makers do not heat the water this hot, so remember this when deciding which type of coffee maker to purchase.  
  3. Time is of the essence. Press pots and percolators have the longest brew time, the highest extraction levels, and, therefore, produce the best flavor that will be worth the wait.    
  4. Use filtered water. Most restaurants and popular, high-end coffee houses ALWAYS filter their water. Chlorine content in non-filtered water will alter the flavor of your coffee dramatically.
  5. To keep your coffee tasting freshly brewed, transfer it to a sealed pump pot or thermos as quickly as possible. Coffee left on the warming plate becomes bitter very quickly and, in our opinion, is best suited for stripping paint.

Award Winning Christmas Sugar Cookies 

 Christmas Sugar CookiesIngredients 
2 c. sugar
1 c. butter
1-1 1/2 c. flour
3  eggs
1/2 c. milk
1 tsp. baking soda
2 tsp. cream of tartar
A pinch of salt   
 
Directions Cream together butter and sugar. Add in eggs and milk. Stir remaining ingredients into a cupful of flour and mix in well. Add to creamed butter mixture. Add in suffiencient additional flour to make a dough that can be rolled out. Do not add too much flour, just add enough to prevent the dough from being sticky. Do not overmix. Bake in a preheated 350 degrees oven for 10-12 minutes. Serve to eager recipients. 
 
For a better Christmas experience, find your favorite holiday cookie-cutter and decorate with colorful and festive icing!
 
Note: Perfect with a glass of milk for Santa and any cookie monsters!
Wendy's Cranberry Apple Pie (w/ dried cherries)

 Cranberry Apple Raisin PieIngredients 
2 pie crust
3/4 c. sugar
2. T. cornstarch
1 tsp. cinnamon (can add up to 1 T, if desired)
3 lg. Granny Smith apples, peeled and sliced
1 c. fresh cranberries
1/2 c. dried cherries
1/2 c. chopped walnuts or pecans
3 T. butter, cut into pieces
  
Directions Place 1 pie crust into pie plate. Stir sugar, cornstarch and cinnamon into large bowl. Add apples, cranberries, raisins and nuts, tossing well. Spoon into pie crust. Dot with butter. Top with second pie crust. Cut ventilation slits. Bake at 400 degrees for 20 minutes. Lower temperature to 350 degrees and bake for approximately 40 minutes. Serve warm. 
 
To reheat: cover loosely with foil in a 350 degrees oven for about 20 minutes. It's also good at room temperature.
 
Note: This recipe was submitted by one of our favorite guests, Wendy Leino from the Mackinaw Area. This is a traditional Christmas addition at the Yoder household and we think it should be yours too!
Pop's Overnight Roast Turkey

Clean and prep a room temperature turkey. Remove the giblet bag from the chest cavity. Including the turkey parts in the cavity are optional. Place turkey in a baking bag or your preferred broiler pan with a cover. 
 
Optional:  Stuff cavity with cornbread stuffing or bake separately. You may want to do some of the dressing both ways. 
 
Add the following ingredients to the broiler pan and turkey cavity:

 Blood Orange Cranberry SauceIngredients 
2 qts. water
1 pkg. dry onion soup mix
2 celery stalks, chopped
1 onion, diced
2 tsp. salt
1 tsp. black pepper
  
Directions The night before your event, preheat oven to 500 degrees. Place the broiler pan with turkey in the oven and set timer for 2 hours. Turn oven off after 2 hours. Leave turkey in oven and don't open the door until the next morning. Once the turkey has cooled enough to handle, it's okay to carve. After carving you can reheat the turkey to your oven's lowest setting, about 180 degrees, before serving. Ladle juice to make the best turkey gravy. 
 
Note: Pops, Lydia's father, had some of the simplest and best recipes. This is one of our favorites. Too easy to be so good.
