Asian Green Machine

 

Since shares this week will feature Tokyo bekana and red komatsuna, it seemed as good a time as any to delve into the
Tokyo bekana
labyrinth of Asian greens. Some of the most well known greens include bok choy and Napa cabbage. Bok choy is a Chinese cabbage with a mild taste, tender and crisp leaves, and celery-like stems that are perfect with some peanut butter. Napa cabbage is also a Chinese
Red komatsuna
cabbage, but slightly sweeter than traditional cabbage. Some lesser known Asian greens include Tokyo bekana, komatsuna, tatsoi, and mizuna. Tokyo bekana features a sweet flavor paired with the crispness of lettuce. Komatsuna is a Japanese mustard spinach that includes dark green and red varieties. The tatsoi green is slightly bitter and looks similar to bok choy.  Mizuna has a peppery taste similar to arugula,

but slightly milder and its leaves are feathery while the stalks of the green are juicy. Cooking with these greens can be as simple as adding them to stir fry, but if you're looking for more ideas, check out this article.

Friends of the Farm: Odd Duck

Odd Duck, tucked away in the Bay View neighborhood of Milwaukee, is a restaurant that's perfect for vegans, vegetarians, and omnivores alike. The creative and inspired menu features small plates and sharable dishes that make local ingredients (including some veggies from right here at LotfotL) stand out.  Owners Ross Bachhuber and Melissa Buchholz wanted to bring the fresh tastes of each season to the residents and visitors of Milwaukee and executive chef Dan Jacobs is helping them do just that! Odd Duck also features special events like the upcoming Best of Milwaukee Beer Dinner. This dinner will feature a five course meal from chefs at Odd Duck, Hinterland, Sanford, Goodkind, and Blue Jacket as well as beers from Dogfish Head, Central Waters, Like Minds, Hinterland, and Founders. The Life of a Pig at LotFotL

I focus my animal husbandry around the concept of dignity. I try to raise animals in as dignified a fashion as possible. This means that when I see them peeking through the fence at small clover strands they'd love to eat, I move the fence. When they bark and chase me, I bark and chase them back. When it comes time for that one bad day in the life of a LotFotL pig, they walk excitedly toward the food stashed in the trailer, and I simply shut the door behind them.
